My mom grew up during the Depression. She and her siblings lived with their uncle. It was common in those days when it was time for dinner to send any kids who didn't live in that house home as nobody had extra. Uncle Bob never sent kids home. He would ask if their mother was expecting them, but if they wanted to stay that was fine. He'd count noses and if there were extra kids he would cut the meat smaller and throw in more potatoes. Ramen stir-fry tip from an Asian: Place ramen in boiling water. The temperature will immediately drop. Add a cup of cold water as soon as it reboils. The temperature drops again. When the water starts bubbling again (not a full boil), drain and rinse in cold water. Stir-fry when ready. This technique ensures the noodles retain a chewy, bouncy texture perfect for stir-frying so you don't end up with mushy noodz. Congrats! You have now reached level ASIAN.

Running under cold water stops the cooking process. When I make mac and cheese for a potluck or office party, I cook the pasta for 3.5 minutes at home at a rapid boil, then immediately remove from heat and pour in as much ice-chilled water as the pot will allow, then run under the tap. Literally 1 additional minute of cooking is too much. If done right, the noodles end up slightly firmer than al dente. Later, I melt down all my cheese ingredients and add the pasta. The cooking process completes to al dente and the final product has perfect texture, instead of turning the pasta into a smeary mush.

I have to say that this looks way healthier than most high starch budget meals that have very little protein. It also looks very tasty. For a person who grew up in hard times when mac and cheese was considered a main dish, this looks good. Thankfully I can afford more than that now, but I still remember how good that Mac and Cheese was. This looks like something even better.
@arthas6402 жыл бұрын
many people forget to balance nutrition when on a budget. you have to eat some cheap meat or beans daily so you get enough protein and you need enough veggies for proper nutrition (potatoes, onions, and cabbage are great and cheap) or you'll get sick eventually and the malnutrition will just make you feel hungrier and lead to overeating or spending money by splurging on something expensive but nutritious

@Katastroofi Eelne Not really... you get 5 ramen for a buck and it makes a ton of noodles. The same weight of spaghetti doesn't produce as much because spaghetti doesn't absorb as much water or feel as filling as ramen does ... my guess is it is because of the wavy nature of the ramen, it "fakes" your body to think it's fuller when it really isn't.

People need to realize these sorts of recipes are mostly targeted at people who are broke and live in food deserts. I am fortunate enough to have a car and gas money to drive 30 minutes to a real grocery store, however if I did not, my only option would be the convenience store and Dollar Store. 23.5 million Americans live in food deserts with no access to popular supermarkets like Walmart, Aldi, Kroger, etc. This is a quick and cheap way to get hella calories for someone with limited resources.

I have four kids, three grown, and I taught them how to cook on a budget and still eat good food! They didn't even have to resort to ramen unless they wanted to! They each had their favorite foods and I taught them how to make them. Oddly enough they were all inexpensive foods to make that could be made in large quantities and eaten on all week! Ham & beans w/cornbread, chicken & dumplings, pasta dishes, pancakes, and more! If you are willing to put in just a little effort, it is less expensive and healthier to make your own food! Super important as a college student or someone with limited funds.

@Pxstel Mess you won't get sick off this,this is more then likely a older pig that was killed so it's meat will be tougher to eat and not as flavorful. Realistically butchering an animal doesn't cost that much nor is it expensive to actually buy one. For $150 you can get a young pig and butcher it and have fresh bacon,sausage,ham,tenderloin etc etc. But the older the animal is the cheaper it generally will sell for because of the meat becoming tougher,the flavor downgrading and a few other factors.

When I was broke during the recession of 2008, I'd buy a whole bag of groceries for $20 in Aldi (german store in Ireland) - stuff like instant noodles (25c/pack), pasta, cheap luncheon meat, etc...I was very happy with that food. Sometimes I was really broke and just ate spaghetti with melted butter mixed through it. I was just happy to have food LOL

When we were just starting out in the early 90's we had many weeks where that $20 budget was all we had for the two of us. It was enough to keep us full but it was pretty tight. Fast forward to the great recession with a 50 week unemployment and our food budget was roughly double yours per person. We had an avalanche of cherry tomatoes from our garden, we stocked up on bowtie pasta when it was on sale and our fish guy had wild caught, Atlantic shrimp on sale for $7.50/lb. I made a great dish with the shrimp, garlic, pasta, halved tomatoes and petite peas. The sauce was based on a broth I made by sauteing the shrimp shells and a few aromatics which I then simmered in 2 cups of chateau de sink (water). We got 2 meals for $10 or $2.50/serving and it was hard to feel deprived of anything with such a delicious and filling meal. Sometimes the best things in life are incredibly affordable. I hope you're doing at least as well as as we are these days, good luck.

I have made several of your recipes this past week. When I made this one, I left out the seasoning - I have high blood pressure so I don't add anything with too much sodium - and I added, half a sauteed onion, 3 cloves of garlic and 2 heaping soup spoons of plain whole milk yogurt. It came out really good.
