Ricotta isn't farmer's cheese! It's made from the whey discarded from other cheeses; the name means "re-cooked" because it's made by letting the whey ferment (making it more acidic) and then heating it back up to just under the temperature of boiling water.

100% agree with adding cream cheese to the cheese mix for lasagna filling. I've done it for a long time and it adds a more creamy texture and zip to the filling. My son hates store bought and restaurant lasagna because he said the filling doesn't taste like mine (which he prefers) and that is the secret ingredient. I am NOT Italian and that is NOT traditional filling. It's just what I prefer and so does my family since I've done it. So don't @ me about it.

@@Konani_the_unicorn_queen bechamel is the traditional Italian way to make lasagna. Ricotta was an Italian AMERICAN way because it was faster. I hate the texture of ricotta and was so happy to learn about bechamel.

I have come to love the Mythical Kitchen videos... Love Hot Dog is a Sandwich probably most... the competitive cook offs are a blast! One thing I would like to see is a Heritage piece. For instance an episode, segment or series that focuses on recipes of the old south (Alabama, etc.) like a often overlooked delicacy like Tomato Gravy, Biscuits & Potatoes... keep the episodes coming!!!

12:30 yes, you technically are not reducing the acidity, but balancing it out on the palate so the sauce isnt as sharp. Its more necessary when making a sauce with more raw (or whole canned) tomato ingredients. just like you could drink lemon juice, or turn the lemon juice into lemonade to make it more drinkable. Not saying your pasta sauce should be as sweet as lemonade, then you just have ketchup.

@@saverica4555 a little bit goes a long way. i worked as an italian chef. a quarter cup in 5 gallons of sugo. It helps the flavors pop and blend together, especially in a meat sauce because of the extra greasiness. You can quickly and easily over sweeten it though. It shouldn't taste sweet. But the long, low and slow cook time is very important with constant stirring. If you walk by the pot, give it a stir.

The one problem I always have with these is, you can get the same size stuff at the non dollar tree place. At target they bought an entire gallon of milk, they sell smaller ones. When it comes to price difference, you should try a 3rd, maybe 4th option, least expensive way (least expensive options BTWN both stores) and most expensive, see if that makes a difference at all. I know I will shop multiple stores to get different things on sale and hardly ever make a dish from the entirety of the same store

As a kid, my family made lasagna with cottage cheese. I didn't find out about ricotta until I was an adult. I was sort of expecting him to use cottage cheese when he couldn't find ricotta at the dollar tree.

Corn starch just to prevent caking. Maltodextrine (Corn Starch) has a glycemic index higher than sugar and is definitely one of the most processed ingredient out there...

I never add sugar, as an Italian. I will add some crushed fennel tho, per my even more italian aunts recipes and it is pretty good,so long as you dont add too much. Crushing fennel gives a licorice flavour when done in large quantity
