Hi James, some tips from a pastry chef, when you add cocoa to a recipe subtract the amount from the flour so that it doesn’t get too thick. So for example if you add 1 tablespoon of cocoa subtract 1 tablespoon from the amount of flour. Also when you fold egg whites into a dish start by adding a 1/3 of the egg whites in and you can mix these in gently but thoroughly and that will loosen the mix and make the gentle folding in of the rest of the egg white easier. Nowadays, highly industrialized places often still sift flour for aeration. But in some parts of the world and in the past, flour is still sifted to filter out clumps of unrefined flour, rocks, wheat stalk , or any other detritus from the processing facility

From what I understand, sifting the powdered ingredients helps to eliminate lumps, and the act of sifting makes them lighter and airier, which makes them easier to mix.

We originally shifted flowers so that we could get the bowevils out of it... There are small insect that eats the flour. It also errates the flower and removes any larger chunks of anything that you might not want in there but flower used to not be as clean and as well processed. Just like most other powders and sugars. I believe it will also help mix the ingredients that are dry Add a little bit of air into the final product although it's so minimal that I doubt it makes a big difference especially after you stir or use a mixer.

You should try that cake hack I've seen where you take a boxed cake mix and a can of soda (the metal tin cans) and mix together, and then cook. It's supposed to come out..."supposed" to come out like a regular cake. Anyways, love this vid ❤️🏳️⚧️🏳️🌈.

Oh! Also, if you wanna make chocolate whipped cream frosting, you can heat the cream and then pour it over the chocolate to melt it, stirring a little bit until it's smooth but not much as it can make it grainy. Refrigerator overnight and then whip the next day. The cocoa butter in the chocolate will give it more body and richness than just using cocoa powder. I think I'm paraphrasing a Martha Stewart recipe, so google her name and chocolate whipped cream for more info

And this is a dumb tip and I'm not a professional in any sense of the word, but if you need to separate your yolks and whites, you can get a slotted spoon or really any spoon-like thing with holes in it and crack the egg on top of it so the yolk will get caught on the spoon and the whites will drip down through the slots into your bowl/egg catching container of choice ✌️😂💓

You can't get stiff peaks with egg yolks.... As a matter of fact if you have any fat in there At any point the egg whites will not whip up at all. You could whip them for ten years and they won't whip off if you've got fat in there.... It's also why you don't want to use a plastic bowl because plastic usually holds on fat. And can cause you cannot be able to beat your egg whites up properly. Egg white speed best at room temperature, In a large bowl... I know that seems crazy but the larger your bowl the more easy it is to incorporate air without making a mess. Same thing for whipped cream. Accept when you're whipping cream you want the bowl the cream the mixer bears as cold as you can get them stick everything but your actual mixer in the freezer and the cream just keep that in the fridge.... And then about a minute before you're ready get everything out set up your mixer. And you're cream will whip up and under two minutes

I made one of these and it was delicious! The one thing that was messing me up was the frosting, the recipe l was using called for gelatin. You definitely don't need that. I want to soon try Japanese Christmas cake which I'm significantly more afraid to do...

You can separate the yolk with a plastic bottle by squeezing it over the yolk and the bottle just kinda slurps it up. I hope that's helpful! 😊

If you want to add cocoa powder to any cake, to compensate for the heaviness, you need to add a tbsp of milk for every tbsp of cocoa powder. Of course, the best way to make a cake chocolately is to add melted chocolate to your mix!
