Today's chicken dish is a true celebration of island flavors sitting on some delicious cassava bread. This Caribbean dish collaboration is so fun to do! What with the other eight fantastic channels who joined! For my part, I did a Dominican Calypso Chicken in which I also made some cassava bread to pair it with. But I think you can eat it also with rice or any other bread. I hope you'll enjoy this. Ingredients
For the Marinade:
1/4 cup Red wine vinegar
2 cloves Garlic (minced)
2 tsp Brown sugar
1/4 tsp All spice (ground)
1/4 tsp Nutmeg (grated)
1/2 tsp Thyme (dried)
1 tsp Salt
1 tsp Black pepper
2 chicken breasts
3 Tbsp Olive oil
1 medium White onion (sliced)
a knob of Ginger (fine strips)
5 pieces Mushrooms
1/2 cup Cashew nuts (roasted)
For the Sauce:
4 Tbsp Olive oil
3 Tbsp Honey (or guava jam)
1 cup Red wine
1 cup Chicken stock
Slurry (2 Tbsp water + 1 Tbsp cornstarch)
Optional:
Cassava bread
