I was born and partly brought up in St. Croix/West Indies. I love ethnic/Caribbean dishes!! Mangu, to me, is way better/healthier than (mashed) potatoes The first time I ate mangu was many years ago, and the last/recent time I've had this was almost two weeks ago at someone's apartment when their home health aide caretaker cooked this with stewed chicken thighs. I've been craving this ever since and will be making this a lot. Thanks for sharing this wonderful, easy, healthy, and direct recipe.

Mangú came from the region of the Congo, when there was slave trade, from a similar dish they eat made with boiled plantains. The name of the dish is mangusi. The word mangú comes from this West African word mangusi, which refers to any mashed vegetable from the earth.Nov 6, 2018

I'm happy to have found your channel. My mom is from the DR and has taught me to make a few things when I was a teen but she never made us mangu for some reason. Really like the video, very professional and easy to follow. Dominican food is definitely a handed down tradition with lots of eyeballing I noticed, haha. :)

I have to say Chef Zee, that I've never had Mangu! I've had plantain fufu, which is also made from green plantain. I could eat some of that with the pollo guisado...I'm drooling just thinking about it! I know I'm missing out on mangu - but thanks to your recipe - I'm gonna fix that soon!

My grandmother made it but she called it pound plantain.. she used a mortar and pestle.. always throw in a little of the plantain water but she made it a bit firmer and she would slice it or make little balls.. it's delicious you can even use the very small bananas it's called sickeya fig....that's in trinidad

Pro tip: use ice water to mash the platanos so it can remain smooth. Ice water stops it from cooking more and hardening

I like my mangu con revoltillo de huevo and cream cheese mashed in. I never eat the onions but, I pour tons of the sauce over it, lol...and I use some of the onion sauce to make the revoltillo. Yum!

I add Garlic to the Plantains while it's Boiling to kick it up a notch. I don't eat Pork so I use Goya Pork Flavor Packet to the Water too. I like my Mangu with Chivo, Rabo, or Chicken Guisado. mmm ha

How long do you boil the plantains? & do you add any garlic or onion powder to the mangú? & How much would you recommend if I wanted to add it?

I boil the plantains until they become soft which can sometimes take anywhere from 15-25 mins. You'll also notice that they change color from a bright yellow to dark mustardy-yellow green color. I personally don't add onion or garlic powder but I know people who do and it's delicious. If you wanted to add it, add it while you're mashing the plantains. I would add a tiny bit at first-- like a 1/4 of tsp or less and then taste it. You can always adjust the garlic and onion powder as you go. It's easier to add more, harder to take away. I hope this helps!
