I made this for my bf and he ate ALL of it. We were both shocked that he liked the way it turned out for me since it was my first time making this food. AND, he told me that leftovers don't keep, so not to make extra. I told him these will keep and added cold water again to reheat. It worked! He couldn't believe it, and he ate the leftovers.

I made this today. I'm not central or south American, or from the islands, but I love plantain. I like green plaintain because it is a better alternative to potatoes for me. With fried eggs, mangu is excellent. My favorite combination. My wife loves it too.. She is from VE and loves plaintain.

I come from Uganda and plantain is our staple food, we eat it with literary everything anytime any where. But our secret to stop it from hardening is never adding salt beef it is fully boiled. You add salt a few minutes before smashing it.

Thank you so much for sharing that secret! I have been wondering why you have to use ice water. My friend uses both ice water and the warm water that the plantains were cooked in. She never told me why she used cold water, but she did say that if the cold water makes them too cold for serving, that’s when you go in with some of the hot leftover water from the cooking, and it warms it up enough to eat right away. Thank you so much for making this video! I think a lot of those special tips are lost in translation typically, so you have no idea how much I appreciate this! Off I go to try my first time making mangu, with fried queso and fried salami for my family. I love challenging myself with cooking, so this will be fun lol. I’m also going to do the lightly fried onion slices with vinegar on the side! I’ll let you know how it turns out and if they like it. Thanks again!

When it comes out stiff is because the plantain continues to cook while we prepare and mash it. adding the cold water stops it from cooking. try it and let me know 😘😘

Kasey Smith girl there is so much u can do I haven't uploaded any videos yet I plan to once me and my boyfriend settle in our new house pretty soon but if you want you can email me and I can send you some recipes that it would definitely make him very happy buttercup12021985@gmail fyi if u dont already kno when they're dark green you can boil them or you can peel the skin slice them and little wheels an inch thick soak them in salt water put some olive oil or vegetable oil of your choice fry them for a few minutes about 5 minutes and take them out get a cup or a plate use the bottom of it and flat them down and then refry them until they're golden brown take him out for a little bit of salt if you like salt and if you don't make it look a homemade garlic olive oil dip sauce you can just throw garlic powder on top I'm serve them with anything breakfast lunch or dinner in the sweet ones are the same instead of cutting them and cooking them other green you wait for yellow and to be honest they're better when they're like almost black you're more sweeter and easier the cut you can slice them down on an angle and deep fry them as well or you can slice them right in the middle kind of like a hot dog bun fry them for a few minutes stuff it with ground beef and cheese or your meat of choice put a slice of cheese on top and bake it there's so many different ways you can do with these plantains regular bananas that we eat on a daily basis little yellow bananas you can eat with whatever you choose try it out you may like it you'll know the difference when you see it and taste it good luck hmu got soooo many recipes

Thank you love. it really means a lot to me. You technically can do this with sweet plantains, just know it will be a bit sweeter and do not need as much water and they are already very soft. I do like when they are yellow but not too riped. if they are riped, i just do the caramelized sweet plantains or fried plantains (my favorite with any rice recipe, my mouth waters).
