I haven’t tried his recipe yet but beer is an amazing thing to use for steaming or boiling seafood. I use cheap decent beer to steam/boil crab and its delicious, gives the flesh a wonderful underlying flavor. And the the resulting beef broth is tasty too, I sometimes even just drink it, or use it for a seafood instant ramen, or as the base to make a seafood Stock, try it sometime
