I'd take Kerela sweet biriyani over Karnataka Donne Biriyani any day. I mean Karnataka has a phenomenal cuisine but Donne biriyani is arguably the worst biriyani out there.

What's sweet biriyani? Btw no biriyanis can beat Hyderabadi basmati biryani. I always choose Hyderabad biriyani over common one.

@@appi4868 I call it sweet biriyani coz they add a lot of raisins & that makes it taste sweet. The comparison is meant to suggest, Donne is even worse than a biriyani that is sweet. It's called Thalassery biriyani, it's an adaptation of nei choru but that ghee rice is heavenly. Yup, Hyderabadi Mughlai biriyani is my pick for the best too. But it can't be consumed daily. Awadhi & Ambur biriyani can be consumed daily imo.

@@appi4868 as I told you my fav 2 & 3 Awadhi & Ambur both are also known to add less spice. Ambur has only chilli paste (not powder) Awadhi famous for being being subtle. Both biriyanis prides itself of letting the meat fat be the dominant flavor. So it's really not about the spice for me, Donne Biriyani flavour wise esp aroma wise isn't good. The palm leaf doesn't give that much flavor. Matka is just old school method I like it too but imo it's style over substance as it has nothing to do with variation. Any Biriyani cooked in matka is matka Biriyani.

@@GokulOnFire I didn't find difference becoz spices r same biriyani making procedure also same it is served in Donne (palm leaf bowl) instead of matka/plate it's not about aroma or flavour palm leaf is just like a plate.

Usually for normal boiled rice, we take 1:2 ratio where rice = 1 & water = 2. And we keep in cooker till 3 whistles. Why pulao doesn't take 1:2 ratio in cooker and why only 1 whistle
