I worked in a restaurant for few years and the tip i can give you to help you from that experience is that you guys should try to clean and set the tables at the end of the service day not at the beginning. If you guys have some time to sit and talk, you might as well fold napkins or wipe the plates. You are there already so might as well prepare the restaurant for service next day. Also, it is very nice to come to set up restaurant - it makes you really motivated for good service. It will probably take you 1h more at the end of the day but will give you so much more time at the morning

I worked in a winery tasting room for 6 years and we did the same. Always set up for the next day the night of. And if you need to debrief, you better be polishing a wine glass at the same time if there’s any still to polish

TIP: You need to cover the “quick trip” fridge. The light and heat from the environment/ sun will make the fridge over compensate. This will lead to mildew growth and a burnt out fridge!!!!

One suggestion Tina...since you say soil is precious there, you can try to get the last bit of it from the roots of the vegetables just by dipping them in some container filled with water, it'll all get collected and you can pour that water back in the pot...

I am 58 and have lived in NYC for the past 37 years. I work from home and find myself watching KZbin for fun on a regular basis. I stumbled onto your channel about a year ago and am always drawn to check out your latest video. It's funny because I don't have much interest in the foods you cook, but I just find you to be so cool and interesting! You are so full of life and so insightful way beyond your young age! Your witty, funny, yet charming personality is very infectious which is why I think you have such a strong following. What you have accomplished with the restaurant is just mind blowing to me. This video was quite an eye opener as to how much hard work and preparation goes into just one evening at a restaurant...and then repeat that every single day! :0 One thing that stuck out with me is that your channel was all built around your cooking and trying different recipes and foods, yet you don't do any of the cooking at the restaurant? I don't mean to take anything away from Kevin or the other chefs. I am very impressed with their knowledge and skills, but the restaurant would not have its notoriety, popularity and charm without you! People come to the restaurant because of Dooby! I am curious if you have any plans to do some of the cooking at the restaurant yourself?

Cooking at home or for others is very very different than cooking in a restaurant. It’s quite difficult and takes a lot of speed, precision, quick thinking and problem solving and usually can take years to work up to a fine dinning setting with such a small crew too, I love Tina but I doubt she could handle it having no restaurant experience at all. It makes more sense for her to just work on the menu and help develop it and then be front of house

Doobyy, just a little tip, you should set official work time (8-10hrs a day) and the opening time within the set work time 1pm-10pm, etc, to prevent burning out of your crews, and also for you and kevin. I know you are still starting, but we know you’ll get the hang of it :)

When you're starting a restaurant most people work 16 hours a day. It's sad but that's what it takes to get established. Most restaurants fail so if you want it to work unfortunately you have to put in those hours.

i think its such a natural experience (your moments in the bathroom) to feel so crushed by the anx and want to quit- and i also recognize that these are all the problems you prayed for a few months ago! how cool! how cool it is to have customers show up at your restaurant and being just a little behind because you had to harvest and prep and organize all YOUR stuff in YOUR restaurant!! yes its anxiety inducing, and that's because you care for it sm and its still so new- how exciting! in times like that in that bathroom feeling like you want to quit, there may be some attachment to this "finish" product or what you think everything "should" look like, but truly its all just one long process of learning and heartbreak and wins and relief and exhaustion and fear and fulfillment and pride. once we can lean into the chaos, we can be more at peace with it :-)

congratulations!! i would consider a shade cloth to go over the space with the extra outdoor fridge so the sun isn't directly hitting the items and produce, and a railing for the perimeter of the roof top~especially if you're going to bring guests up at night. yall have made a beautiful space :)

She also might be experiencing post-covid fatigue. I've had friends who had covid over the winter who are out of nowhere so tired and experiencing other awful symptoms. But yeah, Dooby adding all this stress and new life changes is a lot of factors. Rest is key!!

9:43 where did he learn that? It's the exact opposite. If you cut leaves like lettuce, spinach, etc. It bruises because you're damaging the natural shape of the plants cell, but if you rip it, it it rips along the natural point where the cells touch, so it doesn't bruise.

Honestly, one of the best YT channels out there. Dooby was able to not only evolve and expand, but take us on her own journey as she experienced the highs & lows of opening/running her first restaurant. I have no hate against other vlogs, but this is the first one I can honestly say I immediately jump to when I see a new video uploaded and/or rewatch older videos in case there is an understandable lull in content. Other vlogs feel somewhat, how shall I put it, a bit egocentric? We live in such a me-me-me world whereby people post what goes on in their life/day, how amazing/happy everything is, how perfect and serene things are, buying/making specialty coffee based drinks which take up an inordinate amount of time, and generally showcasing how 'awesome' their life is. But Dooby has presented a wide range of content in these videos. It's honestly one of a kind and breath of fresh air. In the last video (opening the restaurant), I legitimately teared up and cried a bit when she spoke at the end and cried herself, especially when talking about her parents coming to support her. We live in such a disconnected world today whereby we never get to truly connect with people, despite being always online and having "social media," but it was the first time in a long time I felt connected and could relate to such strong emotional responses. It was genuine, all for us to view and it isn't for "entertainment" either, which is the most precious aspect of it all; it is being shared not for mindless consumption, but for understanding. I love this video and all the rest. Thank you so much for sharing your journey with us and I'll continue to look forward to it. In the future, I hope to one day visit and dine in your restaurant. It's an absolutely incredible work of art you've created - both the content as well as the hard work. Kevin is also such a solid supportive rock/partner and I know that there are difficult days, both professionally and personally, but to see how you two navigate everything is also a glimpse into how others in similar relationships should try to mitigate the stresses. Exquisite overall. I can't say enough good things.

I think this is why people compare big life-changing projects (like opening and running a restaurant) to being their baby. As a new mother myself with an actual human baby I birthed, this season of becoming a parent and nurturing my baby has been the hardest thing I have ever done (especially the first few months!). Sleep is out the window, my baby’s needs naturally come before mine, I am working around the clock (yes, taking care of a baby is work), and just when I feel I have settled into a routine, the unpredictable happens. It’s exasperating, but it’s done with love. And though tiring, I wouldn’t want it any other way, because I love my baby and am proud of my baby. ❤ It gets easier over time, I promise! Because you’ve grown stronger and continue to do so. You’ve got this, Tina! And to whoever is reading this comment, you’ve got this too ❤💪
