Try doing a Chinese-styled stirfry: bittergourd stirfry with prawns. The other (Taiwanese) alternative is using salted egg yolk. Think about the complexities in creating a dish with a bittergourd. An ingredient with mixed reactions to its taste. Take it as a reflection of life and its polarities. Bon Appetit!
