Try doing a Chinese-styled stirfry: bittergourd stirfry with prawns. Ingredients: - 1/2 - 1 tsp garlic, minced - 1/2 finger-sized ginger, sliced - 1 tbsp fermented bean paste (doenjjang) or 1 tsp salted black beans - 8 to 1 medium-sized prawns (shelled or unshelled) - 1 medium-sized bittergourd, skip the small bittergourd, it's usually more bitter (soaked in salted water for 20 min to reduce bitterness) - some starch water (cornstarch in water Additional: Cooking oil and other seasoning Use your imgination to whip up this stirfry. The other (Taiwanese) alternative is using salted egg yolk. Think about the complexities in creating a dish with a bittergourd. An ingredient with mixed reactions to its taste. Take it as a reflection of life and its polarities. Bon Appetit!
