The problem I'm having is that I don't have all of the geometry options. Only curvature and segments. Any thoughts on why I can adjust the excrusion depth?

Make sure text will be 3D and and rotation key frame will be Y rotation and take solid gradient map will will default and Apply the adjustment layer or main layer to time displacement map play with values accordingly bro
