Very Knowledgeable content & well explained .... As I understand, Dot convention is used to determine whether the Transformer primary & secondary voltages & currents are "in" phase or "out" of phase (180° phase difference). Which is dependent on how we wind the Transformer physically.

A little bit different. Dot notation identify which terminals at same polarity w.r.t voltage. For current dotted terminals indicates when current enters dotted end of a winding at same instant current will leave dotted end of second winding

If the orientation of coil is reversed then the polarity marking will be reversed as well ?

Yes. Like in this video case if i change orientation (way of wrapping/winding) of coil A then during positive half cycle the direction of main flux ( source flux in green) will be changed.
