Hey. Louisiana here. I’m an expert on seafood boils. We have to have Cajun Crab Boil seasoning mix, but you do you. It’s whatever you want to add that makes it yours. New Sub. PS: you were pretty close on pronouncing “on-du’ ee” sausage. 😂

Well clams open while cooking, so most clams you buy in shop are from clam-farms were you don´t have this much sandy ground + they are pre-prepared (and you want to have the clamwater for delicious broth). I got once fresh clams out of the Adria (we also went fishing with the locals), wasn´t also a sandy issue (as I got them from a rock). Only thing was that I needed to clean the shell from the mussel beard. And the clams Alicia has are looking pre-prepared as the mussel beard is missing + no lime at the shells.
