As a Cajun in South Louisiana, I'd consider this a Creole New Orleans version of jambalaya. Cajuns don't put tomatoes in theirs. But this recipe came just in time for Mardi Gras! Thanks!!

Thank you very much for this recipe. I tried it with all the ingredients and procedure you’ve suggested but, changed the manner the rice was cooked. I did half Basmati and half parboiled, like 3 cups each on the rice cooker separately with Turmeric for color and chicken stock for flavor. I combined them altogether at the end. Proud to say it’s perfect.

Don’t worry Lisa, people in Louisiana can’t agree how jambalaya should be made either. Everyone here in Louisiana makes it a little different because we all learned from our families. Rarely are any 2 people’s recipes the same unless they’re using box mixes 😂. Love your recipes and the book!

This is a beautiful recipe for Creole jambalaya. Cajun jambalaya has no tomatoes, otherwise basically the same dish. Regular smoked sausage is used as commonly as andouille, often a local brand like Manda, Double D, Veron or Savoies. This recipe is authentic and I’m sure it tastes fantastic! I love that you are introducing this flavorful and healthy dish to your large audience, Lisa! I think many people don’t realize many Cajun and Creole dishes can be fresh and healthy.

Though jambalaya is made many ways, in Cajun Country, it’s a local tradition to use pork and sausage, andouille is nice, but a good smoked sausage works great. Your version is more New Orleans based. Parboiled rice is often used, especially by novices as they learn how to cook the rice to perfection. Great tips for those who want to try this as a new dish. I personally love the lighter version made with shrimp and chicken, sans sausage as it can overpower the delicate shrimp and chicken flavor. Like gumbo there’s no wrong way to make jambalaya, great time to share as Mardi Gras is this week.

I've always heard about this meal and wondered how it's done...you made it seems so simple, easy and delicious, it's much like our Filipino's "arroz valenciana" and "bringhe" with the latter being cooked with coconut milk instead of tomatoes and then wrapping up (literally) in banana leaves.

Thank you! Like! I'd make a suggestion though - try to soak the rice for a couple of hours in advance and then steam it separately at a temperature about 70 C (158 F) until soft. The reason for the relatively low temperature is to stay below the point, at which starch in the rice is released an turns gooey. When the sauté is done add some bouillon (chicken, beef or vegetable, depending on your preferences), cover the pot and leave it on a very low heat for all of the tastes and flavors to marry up in the liquid. Strain the liquid to a separate container and turn off the heat under your pot. Wait until the temperature of both, the liquid and the contents of the pot reduce to 70 C. Add rice to the pot, but don't just dump all at once, but rather pick by a skimmer and then shake it into the pot, so that the rice grains don't end up packed into chunks. Gently level the surface of rice to avoid crushing the rice grains then gently pour in the previously strained bouillon. Keep adding until the level reaches the level of rice in the pot. Put the pot back on a very low heat and keep the temperature for the liquid to evaporate through the layer of rice. You want to reduce the original amount of liquid in the pot to 1/3 of the original level. Turn off the heat, add the fat of your choice to the surface of the rice (olive oil, a half of a stick of butter, letting it melt, etc). gently mix everything together. The point of all of this - starch would remain mostly contained within the rice grains while rice would thoroughly absorb all of the flavor but not turning gooey.

I don’t know why people have an issue with her version of this dish. People, there are many ways of making a certain dish. She said several times this is HER version of it. There’s no right or wrong way of doing it. To any dish you add or take away what ever you like. So simple. There’s MANY ways of doing one dish. It’s personal preference. TOP NOTCH Recipe & Procedures. BEST Step-byStep (out of soooo many other recipes out there) that Must be followed to a "T" Though, I did cook the Andouille before the chicken so that the it could absorb the flavored oil/fat that the sausage released. Also, I waited 'til the end to add the pepper-flakes (along with the spicerub-coated shrimps) to verify if it needed more Heat. 👍
