I was in Parma in March 2019. My work colleagues took me to Atmosfera (Greek-Italian fusion) and had a wonderful meal there. The owners are a husband (Greek) and wife (Italian) team. The husband carefully explained the menu to us as well as the history of his restaurant. As long as they are there, I absolutely recommend it!

Also... "raw horse meat"... it is meat, yes, but with a lot of the fat tissue removed; it is extremely lean and it gets grinded very very finely. Then it is added with condiments, mostly salt, pepper and some spices. So it's not like you are biting into the leg of a horse. By the way.. .also prosciutto di Parma is raw in the sense that it's not cooked... but of course prosciutto is cured. I find the taste to be quite delicate. I am not sure, on the other hand, that it's that popular. Many people here also don't like the idea of eating horse meat: it's not the fact that it's raw, it's the fact that it comes from an animal that many people love and, even if they are not vegetarian, they don't like the idea of eating it. (same goes for rabbit...)

You are very well mannered and I understand you have to be since you are in a video but... for the most part, we would eat prosciutto (and "salumi" in general) together with "torta fritta" (as we call it in Parma) using our HANDS, grabbing the prosciutto slice, stuffing it into the piece of torta fritta as if it were a sandwhich.

If you come to Turin or Piedmont in general it's very tipical to eat beef raw meat, minced (battuta) or sliced (albese), seasoned with evoo, salt and pepper. You need to use a very high quality meat and it's so good.

Please let someone who really know gastronomy to talk about Parma. Prosciutto in plastic and you present it .. OMG .. Go to Langhirano where prosciutto di Parma is made and do tasting.. and that is not bread.. omg .. it calls Torta Fritta... wtf?!?! Go in a Caseificio (cheese factory) and do a tasting there... O.M.G again.. you are just a walking shopper that doesn't even done 10% research. You are doing Parma an injustice. So, in conclusion - Parma - Prosciutto, Parmigiano, Salumi di Felino, Anolini, Tortelli alle erbete, Barilla - Headquarters and production of pasta and sauces, Mutti - Headquarters with production of tomato sauces, Vino - Colli di Parma. And yes.. they eat raw horse meat. And yes again, you can cancel my comment but you know you were appalling.
