For your problems with the colours blowing out, I would look into white balancing your cameras. I noticed a very big difference in how the colours of the sleeves are shown by the two cameras. I am absolutely no expert, so you might need to consult either camera manuals or Google. White balancing might not solve all problems, but it is a fairly easy start as it is "just basic settings" (which can still be difficult as beep)
