I never used pasta water. But I guess I can start .

When cooking pasta, always keep some cooking water aside. It serves to make the dish creamier, when the pasta is then placed in the pan with the sauce. And if I can give you some advice, as an Italian, remove the pasta a couple of minutes before the end of cooking from the pot and finish cooking in the pan with the sauce. You will have an even more delicious dish, because the pasta absorbs all the flavors found in the pan.
