If we need a character to act outside of character in swapped fights to win, we are not swapping fights we are imagining bullshit. Doom takes supes because supes especially in a random encounter wouldn't know how to handle the variety of his magic mixed with tech. In a in character first fight supes wouldn't know who Doom is and Doom would know everything about him (Think Avengers Animated series, they lived in his same world and didn't know Doom, yet he thought them not worthy of his time and proved it ) Prime is a different story, he is at times a bloodlusted maniac, but at others he plays ball and talks his shit and that opens up ways for Doom to beat him, not throwing punches, but like he did the Marquee of Death. Waiting, scheming, planning. Also while I agree with most of your assessment about Black Adam. He isn't beating Thanos. Thanos would Never make it fair and he is both a master of the Mystic Arts, Human and Alien Tech and Physically powerful while also he has enhanced himself with biotech. Adam is getting splattered
