Two things struck me. The first is how the ginger rice was steamed in those large sheet pans. I'd never seen that before. When steaming rice, the depth of the vessel seems to always be greater than the length of the vessel. So, this is really different...in how shallow the pan is. Plus, the roast duck...when the owner chopped it in half and the contents of the spices and seasonings were revealed inside. A stalk of lemongrass and some orange peels being the most prominent. Typically, of the roast duck preparations I've seen, the inner cavity of the duck is only rubbed with a seasoning blend. Usually made with hoisin sauce, bean sauce, etc. So, to have actual "stuff" spill out of the duck cavity was new to me.

agree.. the rice cooking in the shallow pan is something i've never seen.. and that duck.. can see it is juicy and tender.. too much duck served is usually tough and dry, and grey.. im definitely going to go try soon.

Bay leave, sweet onion, orange peel and lemongrass. And cooking rice in a shallow pan and steamed is commonly used by many shops, it isnt really that unique.

What a shame, his chopping board is wet. It turned crispy skin into soggy mess. Hong kong chefs constantly wipe their boards with a towel.
