Untested does not mean unsafe. I’ve been canning potatoes and carrots “dry method “ for several years now. You can absolutely tell the difference specially with the carrots. They are sweet and edible. The flavor is condensed because is not being diluted with water. Your video is a good teaching tool.

I love your first line because it's TRUE! I was thinking about just this the other night. Funny, people don't think twice about canning raw meat with no added liquid added - which is made 'because' it has cooked, not cooked because of the liquid.

I'd like to know how long the shelf life is and how to do carrots too. I dont like mushy canned potatoes or carrots. Edible but barely. Yuk. Love your video. Very comfortable homey visit.

The red potatoes and yukon golds work best for dry canning. They are also lower starch potatoes.

A canning hippy after my own heart! Great video. We did 100#'s of red potatoes last week. I did some with peels, some without. Left out the butter though. People tend to not like any type of jarred potatoes, but all you have to do is season them after you open them; you can reheat them in a pot of salted water and mash 'em, or toss them in a frying pan and have them for breakfast. I also did milk, whipped cream, beef pot roast (I cooked that all day in my slow-cooker w/carrots & potatoes) then canned it; turkey meat; and also a few water bathed items like sour cream, and cream cheese. My family was shocked to see what the sour cream looked like but all you have to do when you open a jar is to pour the whey into a small dish, then use an immersion blender to mix it up a bit. You can add back any needed whey at that point.

I love your commentary! I have also discovered the joys and pleasures of dry canning potatoes and other veggies too! I LOVE my dry canned potatoes and I’m like you, I don’t CARE what the USDA says!!! It’s just another thing that they are trying to hide from us. If we can potatoes this way and they taste so great, there won’t be a need to buy the gross shit they sell in the stores. There are secrets of food preserving that they have SCARED people to death about. Since your rebel hippies (I’m 60), I figure you already know that to keep people controlled they have to scare them to death. I love ya lady!!! I’ve also done this method with summer squash/zucchini and butternut squash…tomorrow, I’m doing it with green beans. No more canning veggies the old way. I even am planning to try my own experiment of some greens…collards. I’m gonna toss them in a big bowl with melted butter, a bit of olive oil and salt and pepper. Stuff it in the jar and dry can…I’ll see!!! And I bet I won’t DIE either! 😂

Have you ever done this with pumpkin? Or would you say it's easier to puree it down then can it....I can everything I love the dry packing method :)

How did you do the summer squash and zucchini. I love both and would love to have them in my pantry. I'm also curious about sweet potatoes and carrots. Is there a book on all this with canning times etc. Or another place to find that info. I'm a live alone widow and an tired of food going to waste if I can't eat it in time.

I can't wait to try this myself!!! Wanted to point out one little fact some people may have over looked. While it is called dry canning, it really should be no ADDED water canning. It's not truly dry which is why it works just fine. Potatoes and carrots( which I've heard also done this way) have water INSIDE them which is evident by the shrinkage you noticed when your jars were done processing. That water is coming out and creating STEAM during canning, which is VERY effective at killing germs. The main argument against dry canning is that dry heat doesn't transfer as well as moist heat, which is true, but again this isn't really DRY canning, it is no ADDED water canning. Although I haven't tested this, my educated guess would be that these veg release enough water during the cooking to create enough steam to kill the spores, which is why it works. As others have stated, untested does not mean UNSAFE. You do need to use your own judgement, but personally I don't see a problem with this method and don't think it is "dangerous" as some others do. It's the same with canning raw meat, it releases water as it cooks which is why there is "juice" in the jar when it's finished and so again, it is the steam which is sterilizing things. I don't see how this is any different.

Ok, you've convinced me to try canning potatoes again. I've been canning for 40+ years and I only canned potatoes 1 time because they tasted horrible. I love potatoes too, but I just couldn't stomach canned ones. I really really hope this changes my mind. Thank you!

Carter on “grow and preserve” does her potatoes like this. (Dry cans). When they are done she empties one jar, oils them and seasons them and then smashes them on a baking sheet. Then puts in oven at 450 for 12-15 min. They are crunchy and fabulous with eggs!!! You must try that.

I can dry potatoes and they are great. I don't put butter but may try that, I put a Tablespoon of white vinegar in with a sprinkle of salt. The texture is great and so is the flavor!

I had sweet potatoes to can today so I decided to try two can of dry pack russet potatoes to finish filling my canner. I just took them out of the canner to finish cooling, and they look amazing. I did soak mine first to remove some of the starch only because hubby is diabetic and the less starch for him the better but no salt or oil was added to them and I did notice their is a little liquid in the jars now.

We used to raise potatoes in our garden, around 1000 pounds each year. I would pick out the small potatoes, sorting them by size, then can, with water and without butter, just some salt sprinkled over the top of the potatoes, then add the liquid. I've always had excellent results. Just dump and drain, then heat and mash. 40 minutes at 10 lbs for quart jars only.

We use olive oil and very little of it....just enough to coat the potatoes and to get a good seasoning spread. We tried the butter, but found we like the oil better.

I mix my potatoes up in olive oil and pink salt then I dry can them. I do them in steak fries, diced and whole . I leave the skins on all . They come out amazing. We cook them up in the air fryer.

i dry can my potatoes also we have never been sick from eating them,so we just ate and i had my hash browns dry canned and made hash they were amazing peppers onions hamburger and cheese so good ,many canners would never do this but im old school and my grandmother canned rebel they had to good luck with your new way of canning potatoes

I LOVE mine!!! I put a pat of butter on top with salt/rosemary/garlic and they are AMAZING!!!! I didn’t blanch or anything… but I did WB, not PC. They came out like roasted potatoes….

I'm going to give this a whirl. We discovered home canned potatoes (in water) last fall. They work well to make mashed potatoes. This looks like a great way to diversify our potato meals. I bet these would be great for potato salads too. Is there enough butter in the jar to use that to fry them up?

I canned potatoes in water like the canning gurus said. I sat on those jars for over 3 years cause I couldn’t stand them. I finally opened them all up and emptied in a bucket and fed it to the hogs. It’s only good for pigs! So now I’m going to do it your way cause they really look better and it just has to be better than that other stuff!

I clean my potatoes well, too, then cut them and soak them to remove starch. The water is so cloudy when I do this. Then I soak again and not as starchy. I melt butter and mix in with my now dry soaked potatoes. I also add some salr when stirring in the butter. They do very well.

what keeps the butter from turning rancid? My folks just used this process with a few quarts and are concerned the butter will turn rancid.

@@josephskanks7231 like Pam, i would use ghee where the fats are removed from the butter. however i guess the best answer i can give you would be.like the fats of the meat...they don't go rancid if the lid is sealed. No air gets to the content.

Remember she is not telling you how to can, she is telling you what she did and her opinion about this particular process. You need to research and weigh the options for yourself.

You have inspired me to try this method. Three years ago I did the old way and have been so disappointed and they are still on the shelf. Thank you for this suggestion. I’m going to add our favorite seasoned salt and the ghee and onions.

Also, I don't blanch my potato's anymore. The length of time it takes to bring the water up to temp and then Forth minutes process time.....THEN they come out boiling and you let them sit....they get cooked fully without blanching and are firmer.

Its not dry canning its dry packing, dry canning is done in the oven. Great video I dry pack my potatoes also.

I melt butter and mix my spices in the butter. After I soak them about 5 hours to get out extra starch, I lay the chunked red potatoes on a bath sheet and let them dry a while. Put them back in the big stainless-steel tub and pour the melted butter mixture over the potatoes and work it around with my hands then put them in jars. at the end of processing 90 minutes in pressure canner there is about 1" of fluid in the bottom of the jar. I used butter, salt, pepper and parsley in mine. If i want garlic or onion flavor, I add that when I open them according to what flavor I want at that time.

I soak them in citric acid for an hour , salt and can them. I hate the “mush” of the water method. They are gorgeous fried up for breakfast. I peel potatoes I haven’t grown myself but I just scrub those first early babies . Yes I add a bit of ghee ❤

Pierce the small potatoes you don’t cut so the heat disperses evenly in them.

I have done carrots this way. Mine get soft but taste good especially when fried. I don't add butter to them or the potatoes when canning.

It never ceases to amaze me how people are willing to risk the lives of their families by engaging knowingly unsafe canning practices. Dry canning cannot reach high enough temperatures in a canning jar to kill botulism spores. Adding butter or salt does not change the fact that temperatures will not reach 245f. Science is not suspended just because you think it’s ok. Do what you want but don’t encourage others to follow unsafe practices.

I have been dry canning potatoes for 4 years.. the ones I canned with skins on ended up going bad, was it the lid, I don’t know, but only the ones with skins went bad, I do hash browns and crinkle cut fries and they are the best… I do mine 15psi for 25 minutes and pints 20 minutes

I soak each time for about 20 minutes I did not add salt to the water I add it to the jars the water must be clear before you start adding to jar

I find the pressure canned 🥔 in water is great for Potato Soup. The starch helps thicken the soup. You eat your eggs and potato just the way I like them. Lol😂 "tastes like a damn potato".

Have you ever wondered why commercially canned foods are canned in liquid? I'm just speculating, but if "dry canning" was safe food processors would probably jump on it as a cost-cutting measure. Just "thinking out loud"... 🥔 🫙 Sacramento, California USA 🇺🇸

I’m not saying I never walked on the rebel side of canning, i have . And I don’t consider myself a canning “nazi.” But i will be honest i really want to try dry canning of potatoes and carrots but I’m kinda reluctant, i know botulism is rare but in root vegetables??? And you dont even peel them? And you canned with butter? I just don’t know ladies. So much so fast, lol. How long do they last on the shelf? Honestly the french fries i make from the traditional canned potatoes turn out great, my husband says they are the best fries he’s ever had and he’s the FF king. I want to dry can, really do. How long do they last on the shelf? How long have you ladies been dry canning your potatoes and carrots? I know it’s my decision but would like a little more information before i take the plunge. I think the day may come when water will be at a premium so would like to find out at my pace and not be under the gun to do it waterless. Thanks for your video and your hard work bringing it to us. Would value experienced dry canners opinions. I’ve never even considered it until recently. Thanks again!

If you add the butter after the jar is filled with potatoes, you won't have any jars left with butter and no potatoes. Where the butter is located in the jar makes no difference. If it is on the top, it will melt over the potatoes during canning.

If you do this you do not understand the science of safe canning. Rosered Homestead has a good video that explains why this is not safe. It’s not just that it has not been tested.

May I ask why the butter? Won't it spoil in time? Why not put the butter on top instead of on the bottom? I have the big potatoes I am going to do. Thank you for showing how you do yours. I have been looking at different videos.

Ghee is clarified butter (the milk solids have been removed) and is shelf stable.

I plan to soak my potatoes overnight. Do you think that is too long? I've heard others have soaked 4-6 hours. That isnt doable for me. I think it would be ok, how bout you?

Yes I wash mine and let soak for about 30 minutes or so

There is another good video out there. She soaks for one hour in salt water. I've done it. They are great. And she doesn't add a fat. Maybe that would be good?

You don't have to soaking the potatoes, just scrub them real good with a scrub brush...

Have you ever, and hold onto your pants haha, tried to can green beans dry? I've been thinking about this for a while like if I can do carrots and potatoes and I can dairy milk sourcream and all the Roman pagan no nos 🤣🤣 why not green beans? Maybe toss em in garlic salt and a tad bit it butter shove em in and pressure can them! What do you think?

Hello this I see that caning thes potatoes should be done right with dry caning potatoes is to steam can them under pressure the caning methods with out water being add to it doesn't that make since and just not useing this method in dry caning when it comes to pressure caning the potatoes please any body explain to me what is really going on with caing dry methods

You got a few terms mixed up there. Steam canning is a whole different process. When pressure canning the moisture in the potatoes steam them in the jar at 120°C (240°F).
DRY CANNED POTATOES So much better!!!
