You're welcome Larry! Adding cocoa powder or coffee is a trick that's often employed in making Japanese-style curry. It adds a nice nutty taste which makes it taste like it's been cooking for a lot longer than it has.

You’ve got some great ideas here! My family loves the tradition Indian keema over rice made with ground lamb, so I’m really looking forward to trying the Japanese version. It didn’t know that the addition of baking soda or eno would accelerate the Maillard reaction, so you can bet that I’ll be using that tip in many of my recipes. I have made the Indian keema with beyond beef, and while I quite liked it, my family was neutral at best about the results. But that’s just my experience. Oh, and I’m still making those amazing hot spring eggs in my rice cooker - when my daughter hasn’t absconded with it. Those eggs are one of my favorites, even though they may seem simplistic.

Thanks! Baking soda is great for speeding up browning, but just a few notes of caution 1) A little goes a long way, so don't add too much or you'll taste it 2) it breaks down pectin (which is like the glue that holds cell walls together), so don't add it to anything you don't want to turn to mush (i.e. if you want caramelized onions that still have texture). WOW!🤯 This one sets a new benchmark for High Taste-to-Effort Ratio! I was cooking it thinking, "Yeah, okay, it's going to be pretty good." Then I tasted it. "What?!?! How?!?! This can't be." My mind just couldn't fathom how this can be so good with so little time and effort put in. My palate is still rocking and rolling with all the spices. The ground beef perfectly activates the fat-soluble ones, and there's enough moisture in the mix to distribute the flavors throughout the dish. Only 2 changes. I added oyster sauce instead of the salt. I was eating mine with steamed cauliflower instead of rice, and I felt it needed a bit of sour. I love amchur or tamarind with my curries, but I was too lazy to get up. Then I spied the jar of Tajin I had made a few days earlier. POW! So much sour and roasted chili goodness! It neither diminished the curry nor disappeared under it. They played side by side on my palate in a perfect duet. A vinegar-based hot sauce would have probably had a similar effect.

Hello Marc! I don't have all the ingredients to make the curry paste, but I do have the boxed Japanese curry roux blocks, can this be done using those?

Yes, but at that point you're making a different recipe and it's not going to taste the same. Basically you'd need to brown the beef and crumble it up and then add a few roux blocks with a little water (just enough to melt the blocks). Then you can evaporate the liquid.

@@iwankonopiejko4278 That explains it. Sodium Carbonate is not baking soda (Sodium Bicarbonate). Although the names sound similar and they have similar chemical formulas, Sodium Carbonate (pH 10-11) has a MUCH higher pH than Sodium Bicarbonate (pH 8.5). Although this doesn't sound like much, the pH scale is logarithmic so the compound you used is about 320 times more alkaline than baking soda! It's a fairly strong base so you're lucky you didn't get chemical burns in your mouth.

Definitely not a good idea if the eggs aren't raised and handled for being eaten raw. Poached eggs, sunny side up, and hot spring eggs are all great alternatives.
