I lived 54 years in Portugal and visited the Azores about 12 times. I've made fresh cheese/queijo fresco a lot and to curdle the milk when it's warm, I used about half a lemon or white wine vinegar. Some I made with salt, some I made without, so the person eating it could choose to use salt/pepper or both. Alo I strain the it through a clean cloth/cheese cloth to remove all the whey. Different methods. All tasty.

Thank you for watching! Yes, I also have used lemon juice or vinegar, and sometimes it works better than the rennet! I love fresh cheese, one of my favorite foods!

Thank you Nidia, We always add some salt to the bottom of the mold, add some of the curds to the mold when it's half full add a little more salt finish adding to the mold once full add a little salt on the top.

Can I ask a quick question....when you left the milk on the stove to curdle, did you turn the heat off or was it still on low the whole time? I didn't notice you turn it off but perhaps I missed something. Trying this for the first time - we miss this cheese from the Azores so much!

You do turn off the heat as you don't ever want it to boil. You just want it to get warm/hot then turn off the heat. Next you add the rennet and keep checking it for curdling. Thanks for watching. We love this cheese.

Hi Dave... Good point! I would estimate the temperature of the milk to be lukewarm, which typically places it between 98 and 105 degrees Fahrenheit, 36.5 to 40.5 Celsius. Hope this helps, and thank you so much for watching!

You should use a thermometer and the milk’s temperature should not exceed 97 degrees Fahrenheit. I sure hope you don’t taste the milk for temperature when you share that cheese with others, that’s gross! Secondly, half a gallon of milk should get 1 tsp if rennet powder and no salt in the milk. Only add salt when you are putting the curds into the molds and as you layer you can add additional salt. Your milk curdled too much and should resemble a thickened custard consistency. Keep trying and use better hygiene!

Thanks for the info...but here is a suggestion...best to use a separate spoon to taste...putting the spoon in your mouth twice and back into the milk, was not cool...the health department would shut you down...just saying...I would cut that part out...of the video out...love the cheese !!!
