Hi Audrey and Sam, My wife, Sandy, and I are going to spend about month in Croatia in May/June 2019. We are driving from Venice around the Adriatic to Dubrovnik. Then ferry to Bari, Italy and up the Italian Adriatic coast back to Venice. We will be thinking about you two as we walk the steps, eat the delicious food, take our photos, and ogle the sights! One tip I learned while staying in Old Town, make sure to have proper footwear and walk carefully when it rains. Almost everything in Old Town is marble and it gets really slippery when it rains. One of my classmates tried to wear flip flops in a rainstorm and almost broke her ankle.

Love the video guys! For people who have enough time, a half day trip to Cavtat (about half an hour drive south) is highly recommended. My wife and I loved Dubrovnik. And we definitely agree with the walk around the walls! There is also a sunset cruise that takes you from the new harbour out around the walls and back into the old harbour after dark (captured some stunning sunset photos)

Nice video. How many days is it worth to spend in Dubrovnik a 1, 2, or 3? Did you travel through Bosnia to get there? And are there any visa considerations when traveling?

Thanks! 3 nights would be ideal. No, we went from Split and it was an easy crossing. You'll have to check that with regard to whatever passport you carry.

I want to go to Croatia next April, but all the websites and blogs I’ve read says Croatia doesn’t ‘open up’ before May. Do you think I can go to Croatia in April, considering you were there in March?

Yes, we really enjoyed it in the spring. Nice weather and fewer tourists because the cruise season hadn't started yet.

@@samuelandaudrey Thanks, that's exactly what I like! So strange that I saw in so many places to only go after May - October. Maybe they meant the islands were less accessible?

Thank you! You would just want to book sometime right in or nearby the Old Town which is at sea level.

Candied citrus peel. Added sugar? Yes, you cut out (or scrape off) as much of the inner white ‘lining’ of the peeling, keeping the outer peel. Cut it in strips and boil it in sugar water. You boil it until the water is reduced by more than half. Then you take the peel out and let it cool. I lay it out on waxed paper or parchment paper. Never something absorbent like paper towels (cringe). The paper towel will pull the water out and then stick to the peel. The only way to get the paper towel off the peel would be to wash the peel and start over. Silicon sheets will also work. There will be some excess sugar when it is cool and dry. No problem, just shake it off. If you keep the excess sugar contained and clean, you can even reuse it. Put the dry peel in an air tight container and it will last awhile. If it sits too long in plastic, it will pick up the taste of the plastic and taste quite stale. I use glass jars and stainless steel containers with tight lids. You can also put a few strips of fresh orange peel into a jar of sugar to impart the taste into the sugar. Great for tea but don’t know that it would taste that good in coffee. Never tried it though. I give candied peel away for gifts and will also make vanilla sugar and vanilla extract with the vanilla beans after I have scraped off the vanilla ‘caviar ‘. As an aside, the white skin (pith) of the citrus is very bitter, which is why you want to get as much off as you can. I find that a smoother lime zester will get rid of the stuck parts. And you asked for a candied citrus peel tutorial, didn’t you? I started by answering Sam’s statement that they probably added sugar and as my confirmation of that statement was the beginnings of a How-to, I decided to see it through. You can delete it if it is over the top.

It's not just inflation, it's more about the time of the year. They were there in March, off season, so prices were lower then they are in season.
