Candied citrus peel. Added sugar? Yes, you cut out (or scrape off) as much of the inner white ‘lining’ of the peeling, keeping the outer peel. Cut it in strips and boil it in sugar water. You boil it until the water is reduced by more than half. Then you take the peel out and let it cool. I lay it out on waxed paper or parchment paper. Never something absorbent like paper towels (cringe). The paper towel will pull the water out and then stick to the peel. The only way to get the paper towel off the peel would be to wash the peel and start over. Silicon sheets will also work. There will be some excess sugar when it is cool and dry. No problem, just shake it off. If you keep the excess sugar contained and clean, you can even reuse it. Put the dry peel in an air tight container and it will last awhile. If it sits too long in plastic, it will pick up the taste of the plastic and taste quite stale. I use glass jars and stainless steel containers with tight lids. You can also put a few strips of fresh orange peel into a jar of sugar to impart the taste into the sugar. Great for tea but don’t know that it would taste that good in coffee. Never tried it though. I give candied peel away for gifts and will also make vanilla sugar and vanilla extract with the vanilla beans after I have scraped off the vanilla ‘caviar ‘. As an aside, the white skin (pith) of the citrus is very bitter, which is why you want to get as much off as you can. I find that a smoother lime zester will get rid of the stuck parts. And you asked for a candied citrus peel tutorial, didn’t you? I started by answering Sam’s statement that they probably added sugar and as my confirmation of that statement was the beginnings of a How-to, I decided to see it through. You can delete it if it is over the top.
