The problem is that it's being reinterpreted as if they said, "it's just a scientific theory." That's not what they said. They said it's just a theory. On the Wikipedia page for theory, it says near the top that a theory can belong to a scientific discipline, a non-scientific discipline, or no discipline at all.

A scientific theory and "just a theory" are two very different things. See, colloquially theory means hypothesis. In science a theory is the best explanation for a natural phenomenon supported by repeated testing and data. It's not a guess or a hunch.

I'd say it is by definition. If the composition isn't water, then it's not water. In other words, if A is A, then A cannot be not-A. If A were to change, A would no longer be A. It's a bunch of silly nonsense that only makes sense if you ground it in reality, but then you get fuzziness. In reality, it's more like "We call the matter in this space A. If the matter occupying this space changes sufficiently that it no longer is meaningfully equivalent to the properties we attribute to A, then it is no longer A. Thus, so long as we have a defined reference point, our definition of A does not change and such the composition of anything defined as A cannot change." It helps to think of language in terms of the inherent tradeoff between precision and accuracy. The more precise a statement, the less accurate it is in reference to reality. The less precise the statement, the more accurate it is when describing reality. Balancing the two comes down to utility, whatever goal the speaker aims to achieve and how well the statement serves achieving that goal.

I think the point at 1:07:00 could be a bit more nuanced with regards to whether a person in a vegetative state is an atheist. I personally subscribe to the opinion that to lack a belief something has to be capable of that belief in the first place, otherwise it's a category error. For example, a rock isn't an atheist, because a rock isn't capable of holding a belief in god-ascribing atheism to a rock is a category error. The argument then becomes whether a person in a vegetative state can have a belief in anything. Being a human means that they're capable in general of holding beliefs, but their current condition precludes them from holding a belief. I can see validity either way - they're an atheist because they're inherently capable of holding a belief in god and currently lack that belief, or that it's a category error because they're currently not capable of holding any belief in god.
