Boris Johnson put the "Oven Ready Deal", NI protocol and all, to the UK electorate and won an 80 seat majority on it. The UK government then put the NI protocol, as part of the "Oven Ready Deal" and the Westminster Framework to the vote in Westminster. It was passed in the House of Commons and the House of Lords. It was given Royal assent by Queen Elisabeth 2 and is UK law. Get back to me when UK law in this matter changes.

The DUP's behaviour comes down to two things. Firstly, they supported Brexit because they wanted a hard border on the island (as you said). Secondly, they don't want to work under a Nationalist First Minister, so the protocol is a very easy excuse for them to boycott the Executive. Even now, they're hoping that their boycott will bring back direct rule but they've already been told that it will most likely be some form of joint British/Irish authority.
