You could go for a high trail drop bar mountain bike like the Fargo, Stargazer, or Cutthroat. Either that or switch to 650b wheels, which’ll reduce toe overlap! Good luck!

Find a way to get out there, even if it's for 30 minutes or so. Former Coloradoan here, and hope to come back someday. Where I'm at, winter is so gloomy. Deciduous trees dont help. I like my evergreens. I go out and ride for an hour every day at midday. Got to stay enlightened. Work be damned, but I'm also fortunate to have a boss who's supportive, and it helps that he works 900 miles away.
