The Dutch Baby pancake, or German pancake, is a large, fluffy, oven-baked pancake. Despite what the name might suggest, it doesn't originate from the Netherlands but from the United States, specifically from the German American community.
The name "Dutch Baby" was coined at Manca's Cafe, a family-run restaurant in Seattle operated by Victor Manca from 1900 to the 1950s. The term "Dutch" is actually a corruption of the German autonym "Deutsch," and "Baby" likely referred to the smaller size of the pancake in comparison to larger, sheet-pan German pancakes. The original recipe is similar to the German “pfannkuchen” and was brought to the United States by German immigrants.
The Dutch Baby gained popularity as a breakfast dish in the United States and has variations that include sweet and savoury versions. The pancake is known for puffing up in the oven due to the high temperature, which creates steam in the batter as it cooks. This reaction causes the pancake to rise dramatically over the edges of the pan, creating a bowl-like shape often served with lemon juice and powdered sugar, fruit toppings, or syrup.
Over the years, the Dutch Baby has appeared in various cookbooks and featured in numerous cooking shows and articles, each adding a unique twist or flavour to the traditional recipe. Because of its dramatic presentation and versatility, it remains a popular brunch item.
The Dutch Baby is a delightful example of how simple ingredients can be transformed into an impressive dish. It continues to be a favourite for its dramatic puff and delicious taste.

Taking Cooking food back to basics.
Ingredients:
3 large eggs
110 grams / 1/2 cup of all-purpose / plain flour
160 / 2/3 cup millilitres of milk
1/4 teaspoon salt
1/2 teaspoon vanilla extract
56 grams (about 4 tablespoons) of unsalted butter
Optional: Powdered sugar, lemon wedges, and fresh berries for serving
Tray size 10.5 x 7 Inches
Preheat your oven to 460°F (230°C). Bake for 25 minutes.

My granny came from a Yorkshire family. After Sunday lunch, if there was Yorkshire pudding batter left, she always added currants, vanilla and sugar and then baked it in a shallow dish. We’d have it with Jam and custard. As kids we loved it. Never had it since she died. It’s time to bring it back. It’s definitely a nightmare for you Rik trying all the food 🙄🙄🙄lol xx

My family has been making Dutch Baby for 50 years. It is the easiest, lazy breakfast ever! We serve ours with powdered sugar, jam, and being American, maple syrup (real stuff). No, not all at once. We just put a variety of toppings out so everyone can have what they like. Sometimes, I put finely crumbled bacon on the bottom. So good!

Loved the time lapse sequence as is it rose and got all golden brown and crispy ! The smell must be heavenly . Being Canadian, Maple Syrup would be a must ! Cheers !

When I was a kid, any leftover Yorkshire puddings from Sunday lunch, (Mum used to make them in a fairy cake tin) were left to go cold and as a teatime treat we'd have one with a dollop of strawberry jam in the middle. We used either butter and real maple syrup or a good sprinkle of granulated sugar on top of butter and then a generous squeeze of fresh lemon juice. After that, it was war to see who got the best parts. Nice on a Sunday lunch. Good memories.

Omg Rik never seen you so animated. I was chuckling whilst watching the video. As you say the only difference to Yorkshire pudding,is the vanilla essence and the butter.I will make this for my daughter as she used to love jam on the yorkshires. Our favorite way to eat German Pancake/Dutch Baby is with Butter and Dark Maple Syrup (real - we live in a U.S. state where it is made). We also like powdered sugar and fresh berries. Jam would be an option if we didn't have that. One of the other comments reminded me of the breakfast we used to eat before delivering Sunday Morning newspapers - Waffles with jam, vanilla ice cream, and maple syrup, with crisp bacon on the side!!!

The Joy of Cooking Dutch baby recipe is my go to when I want pancakes on a Saturday morning but I can't be arsed to stand there pouring them out one by one. ;) The recipe is essentially identical to yours, but the butter is heated a bit more. In a preheated cast iron pan you cook the batter for a minute or two on the burner before putting it in the oven. Or you preheat a glass dish with the butter in it. Either way, it only takes 12-14 minutes in a hot oven. We eat them with maple syrup (I'm Canadian) or jam, sometimes with blackberries from the garden.

Oh, yum. To this Dutch/German/Scottish woman this is crying for cinnamon along with the vanilla and slathered with real maple syrup. I had no doubts that my favorite Yorkshire Chef would be able to bake this. I love the way you say, "just easy" and "no stress" while you're cooking.

My mum used to do yorkshire puds as a dessert..warm and less well done than a savoury one..served with lots of sugar.simple but amazing..esp if you got the middle piece x

It's a Yorkshire pudding. Just sweeter. We used to get them this. Size from the fitties holiday site cleethorpes. Filled with mince gravey & peas 😋😋😋

Delicious. We use to have warm stewed apples with cloves in put into middle of pud when cooked. Sometimes cream or custard added. Never knew the name. Wonderful to see receipe again. 😋😋😋😋😋😋😋

A great way to use leftover yorkshire pudding batter, i suppose all kinds of toppings could be used Rik. I have heard of Dutch baby but didn't know what it was. It looks very similar to Indian Fry Bread which can be served sweet or savory. Buying it from a food truck or at the state fair, you could order it with powdered sugar or honey, or with some taco meat. It is usually round fluffy disc shaped and I think deep fried.😎

We have a local variation on fry bread called a beaver tail - bread dough rolled out thinly into an oval and deep fried. Not had a savoury version but nutella spread on top is also very good.

I do mine in a frying pan and sprinkle Blueberries on top of the batter. When it comes out of the oven, brush round edges with melted butter and shake lemon juice over it all. The sound is tremendous! Sift over the icing sugar and 'bobs your uncle' as we say round these parts! Delicious!

That thing along with your Yorkshire Puddings are like a miraculous science experiment... it would be fun to make them just to see them do their thing! Still haven't figured out why so many things are called Pudding... when they aren't puddings, in the traditional sense of the word (or in the U.S. at least). But then I have to keep a google tab open just to translate British terms you all use. lol Makes it more fun, I think. I'm not only learning more about cooking but a new language too. LOL When you brought that thing out of the oven my mind filled it with smashed strawberries and covered it in whipped cream for a giant strawberry shortcake. Actually it looks like a bowl you could fill with anything you wanted, sweet or savory. Thanks, Chef! Shirley in NH

I’m on the other side of the world. Never even heard of a Dutch Baby before. Not sure what to think of that, lol! Anything that can hold lemon, jam, golden syrup, cream etc couldn’t be all bad. You haven’t steered me wrong yet, so i’ll have a crack at one of those tomorrow 🥞
