Hi Mate - Makro have it - in the booze section mate and you can get from Rimping - its about 220 baht or online. Just to add Makro on the super highway have 3 different kinds - ive used the same brand for years so tend to stick with it. best, Rik

I miss it out regular especially with dark soy sauce - You know when i worked in the Chinese it was just another ingredient that had to be added as I went down the line salt - soy - msg - etc etc but you know soemtimes its not needed there is enough flavour - and as working cooks/chefs we all forget sometimes - conditioning I guess

Been doing many Asian dishes for the past year and so quick and actually cheap to make filling meals. I managed to find all but the dark soy sauce, in my local grocery stores. Somevthings I can't find but most are available.

Thanks for tip that bean sprouts can be topped & tailed before adding to the stir fry. I am positive that I will eat more bean sprouts when I trim them up before cooking. Personal preference but why not try something different?

Chow mein is my most favourite Chinese dish, for me that's a nice big portion for One! One of our York restaurants used to make a Very spicy hot Thai beef salad, and it was very spicy hot, do you have a recipe for a similar dish Rik by any chance.. Cheers Neil

I struggle with making the noodles, some brands are thinner than others but all are expensive here in rural British Columbia Canada even at the big box grocery stores in neighbouring bigger small cities. Cost plus fuel to travel by private vehicle as the only option. I would also like to know if I should add some sesame seed oil to the cooked, cooled and drained Chinese noodles before I refrigerate the extra noodles. Perhaps a short video on that subject.

chicken is fine mate - you dont have to use baking soda or anything to make tender - you can but be careful or it will go to mush very quickly - 10-12 mins max

I like it! But you throw away the wrong end of the green onions! We just cut off the roots really close, then start cutting at the white end and use all that in the dish. But we also use them as a side dish, roots trimmed off, and the rest of the onion is a great condiment just dipped lightly in salt and eaten straight to the end!

I think you take cooking too seriously if you want to be so pandantic over the difference of United States liquid tablespoon is approximately 14.8 ml (0.50 US fl oz), a European, United Kingdom and Canadian tablespoon is exactly 15 ml (0.51 US fl oz), that's 0.01 of a difference - way too much for my recipes.
