Looks yummy! One of my favorite dishes that Mom made was what Pop called "Ross con Pollo" i.e. Chicken and rice. What she did was put cooked rice on Aluminum foil with butter, with the Chicken Breast on top and then wrapped the foil over the top and then baked in the oven. Some veggies to go with it...

A word from a Southerner: We talk how we talk, just like Latinos. How rude would it be for a southerner to correct the way a Latino person pronounces certain words? Folks from different regions speak and pronounce things differently, and it’s perfectly ok too.
