You are so amazing I can not help to wonder what your background is very interesting. I had a lot of trouble with freecad I also had a lot of trouble with this video few months ago. But things are really starting to click. Few things I did differently than you in this video for the Join Curve for the base I used symmetry instead of mirror. B spline r view to cut the top, I just extruded the line to create a solid plane then sliced.

Why is there no datum plains in the part workbench and can't sketch to a surface? Thanks!

You can move or attach the sketch directly in the data. No datum plane in part wb.

Is there a reason I don't know about, using booleans instead of just the pocketing? There are several times I hoped you pocketed but you just cut :)

I rarely combine PartDesign with other workbenches because it tends to make the history a bit confusing for me (just for me). And also the sketch in Partdesign can not be moved or rotated in Draft, you have to deactivate it first. Using boolean I can directly use the transform tool or scale tool for the cutter and the object I want to cut. But in the end, you can use the pocket if you feel comfortable with it!
