This is the time of year when we can eat fresh vegetables, and cooking them is a lot of fun!
We would like to introduce you to 9 dishes that are perfect for this time of year, using mainly summer vegetables.

👨🍳meal prep
*Seasonings such as pre-cooking are not included in the amount.
*Stir-fry and deep-fry oils are not listed.
■Soaked Okra in Dashi (Japanese soup stock)
1 bag okra
400 ml soup stock
1 tablespoon mirin (sweet cooking sake)
2 tablespoons light soy sauce
1/2 tsp salt
*If using a soup stock packet, check the taste and adjust the amount of salt.
*Keep refrigerated: about 4 days.
■Fried Celery and Vermicelli with Dried Shrimp
1 celery stalk
Celery leaves, to taste
1 ginger
60 g vermicelli
15 g dried shrimp
60 ml warm water
1 tablespoon rice wine
2 teaspoons fish sauce
Less than 1 tbsp sesame oil
1/2 teaspoon five-spice powder
*Keep refrigerated: about 2 to 3 days
■Braised Pork Rice
600 g pork belly chunks
2 cloves ginger
2 cloves garlic
1/4 onion
2 dried shiitake mushrooms
2 tablespoons dried shrimp
2 teaspoons five-spice powder
3 tablespoons sake
1 tablespoon sugar
2 tablespoons honey
3 tablespoons soy sauce
1 1/2 tablespoons oyster sauce
1 tablespoon vinegar
2 cups water
4~5 boiled eggs
thick white sesame oil
sesame oil
*Keep refrigerated: about 3 to 4 days
■Lemon Salad with Pressed Olled Barley
50g olled barley
1 cucumber
1/2 purple onion
16-18 edamame (green soybeans)
2 slices ham
3 tablespoons olive oil
Juice of 1 lemon
salt to taste
A dash of pepper
*Keep refrigerated: about 2 to 3 days
■Konjac Noodles Stewed Green Beans and Beef
200 g green beans
200 g beef cutlet
1 bag konjac noodles
1 ginger
1 tablespoon sesame oil
300ml soup stock
2 tablespoons sake
3 tablespoons soy sauce
3 tablespoons mirin (sweet cooking sake)
1 1/2 tablespoons sugar
*Sprinkle shichimi (seven flavor chili pepper) on top when eating.
*Keep refrigerated: about 4 to 5 days
■Salmon, Eggplant and Shishito Peppers in Noodle Soup Base
3 slices salmon
3 eggplants
1 bag of Shishito peppers
1 piece of ginger
1.5 to 2 tablespoons noodle soup base *Taste and judge according to the concentration
White radish sprouts, to taste
Cut lemon, to taste
*Keep refrigerated: about 2 to 3 days
■ Vegetable Quick Pickls
1 celery
1 cucumber
1 eggplant
2 myoga
1 tablespoon light soy sauce
1/2 tablespoon mentsuyu
1/2 tbsp vinegar
1/2 teaspoon sugar
Salt to taste
*Keep refrigerated: about 2 to 3 days
■Ratatouille
1 onion and red onion, together
1 each bell pepper (red and yellow)
1 zucchini
5 eggplants
2 cloves garlic
1 bay leaf
50 ml white wine
Olive oil to taste
Salt to taste *Season each ingredient thoroughly
1/2 tablespoon white wine vinegar
2 bags tomato paste
2 tablespoons water
6-7 basil leaves
2 sprigs thyme
2 teaspoons dried oregano
1/2 tablespoon balsamic vinegar
Salt to taste
Finely ground pepper to taste
1/2 Tbsp. sugar (to finish)
Refrigerate for about 4 to 5 days.

■Curry-stewed Mackerel
3 slices mackerel
2 cloves garlic
1 teaspoon cumin seed
A pinch of cardamom
A pinch of fennel
1 teaspoon curry powder
1 knob of curry roux
100 ml white wine
100 ml water
1 tablespoon olive oil
*Keep refrigerated: about 4 to 5 days
