A random drive to find waves results in an epic free meal! I was staying in Dunedin area, and was driving to Aramoana Point when I found this beautiful spot 🇳🇿😎💯
Thanks to Piki & Trevor for showing me the ropes. I HIGHLY recommend giving this activity a try, super easy!
Bless up,
Matty P

OK, Start w/ olive oil, bring to med high heat, add garlic (and a shallot) thinly sliced, when they start to toast and brown, add clams, swirl around 2 min, add wine, little S&P and cover (do not keep opening, you can peek after 4-5 min but if not open, KEEP COVERED, they will open fast when it happens, then add a good knob of butter and some chopped parsley, cook another minute and scoop clams out and set aside in plate/bowl and reduce the sauce 3-4 minutes til it gets little thicker and creamy. Pour sauce over reserved clams, top w/ a little more parsley and some toasted bread and VOILA!!!

a big blob of butter, a squeeze of lemon juice and a dash of cream is all you need to add to your recipe to take it to another level. and some crusty toasted bread to mop up all the juices!

I like to cover mine with boiling water off the heat , Cover and leave them to sit in it for a few minutes to open on their own. Its super gentle and they tend to suck up some of the water which makes them super plump and juicy without making them rubbery. Or I cook them in cream with garlic and chilli and ginger and dunk break in the sauce
