According to Wikipedia, three cup chicken (3 cup chicken) or sanbeiji 三杯鸡 originated from Jiangxi province of southern China but became especially popular in Taiwan. I guess that's why many people thought this is a Taiwanese dish. Oh well at least i did. The dish derives its name from the three cups of sauces required as ingredients. For each chicken, a cup each of soy sauce, rice wine (usually mijiu although it may be mixed with Shaoxing jiu), and sesame oil are added. However, ours have been modified to suit our taste buds.

Ingredients
Serves 4
2 chicken thighs
2 tablespoons sesame seed oil
3 tablespoons dark soya sauce
3 tablespoons Chinese cooking wine - Huatiao jiu
I bulb of garlic
3 bulbs of shallots
A handful of sweet or Thai basil leaves
1 thumb size ginger
1/2 teaspoon sugar
Some white pepper to taste

Thank you for directing me to this video a few weeks ago. I tried this recipe yesterday and it tastes amazing!!!! (though I did not have basil leaves). I live overseas and had never cooked before I moved. Your videos show that cooking can be made easy and now I can always taste home flavors whenever I miss it (quite all the time)! :)

Good morning Sure Win. If you want to add dry chilli, hydrate them and dry them first. Heat up oil and fry them until fragrant before putting the rest of the ingredients in. 🤓

Hi Roland..I just want to ask what’s different Chinese cooking wine n rice wine?is it same?

Hi Yun Ru. They are different in terms of flavour - made from different types of rice. Shaoxing wine is more pungent - very suitable to be added at the end of cooking to add extra fragrance to the dish. If it’s cooked for too long, Shaoxing wine tends to get a little sourish. Rice wine is lighter in flavour - we usually use it to remove nasty porky or fridge taste from frozen ingredients. Rice wine also adds fragrance to a dish but it’s not as noticeable as Shaoxing wine. Hope I’m not confusing you. You gotta try them both out in cooking to experience it yourself. Happy cooking!

Quite confused with the dark soya sauce part. Is it the watery type (I don't know how to describe this, it's just a more watery variation of dark soya sauce)? Is it the thicker type (similar to Lee kum kee 老抽)? Or is it the thicker type but sweet (those used as a dip for chicken rice)(or what they call 酱油膏)

Hi Jeffrey. It’s the thicker version of dark soya sauce. If you go for the premium type, it’s usually dark and not very salty. You can also use the chicken rice soya sauce. No problem. We like to use that as well because it gives a nice caramel taste and make the dish look dark without making the dish overly salty.

Hi Angeline. The key ingredients of 3 cup chicken are soy sauce, rice wine and sesame oil. If you omit rice wine out, the dish will still be nice but it will lack one dimension of taste to make it taste exceptional. Hope this helps.
