IDAHO FALLS -- When the Mexican restaurant Pachangas opened nearly 9 years ago it held only seven tables. Since then the business has drastically changed.
“We actually started across the street from the court house on Capital. We were there for about four years,” Owner Antonio Meza said "And hit five years here in April at this location."
Before Pachangas, Meza began his restaurant ventures in California.
“I started the restaurant industry back in ’96, it was family owned an operated business, I did work for them for about four years, moved to Idaho and went into the corporate world.” Meza said.
After a while Meza felt it was time to pursue his own business ventures, and started Pachanga’s.
Meza received inspiration for his dishes from his upbringing, as well as experience in the restaurant industry. His menu carries a Mexican, and southern California mix.
“Diversity is a big thing. We carry Mexican food to accommodate different palates,” Meza said.
A popular dish designed by a loyal customer is the Justin Special.
The dish contains three entrees - Pollo Fundido, a lobster enchilada, and a fish taco.
When making pollo fundido chicken and cheese are wrapped in a warmed tortilla, deep fried, and topped with a secret queso sauce. The lobster enchiladas incorporates a white cream lobster sauce, and the avocado fish sauce gives the crunchy tilapia in the fish tacos its unique zing.
Aside from the great food, Meza’s number one concern is the staff he works with and the people he serves.
“Our guests when they walk in they really feel what we have going on here. We possess and carry great positive vibes,” Meza said.
“Here they know you by name, they know what you drink, they know what you like, it’s like family,” customer Justin Manwaring said.
