Honestly, I’ve learned the easiest and quickest way to cook the chicken is to poach it in the water, lemon juice and salt.

I’m so picky about my chicken salad and my tuna salad. For my chicken salad I poach the chicken then cut it in cubes. I add pecans and red seedless grapes and yes Miracle Whip. Miracle Whip is what I was raised on, neither of my parents liked mayonnaise. They only ate it if it was something prepared by someone else. They used Miracle Whip. Since that is what I was raised on and I don’t care for mayonnaise that’s what I use. For my tuna I use chopped boiled eggs and chopped sweet pickle and Miracle Whip. No onion or celery in either one. Like I said I’m picky😂😂😂😂 I’ve never used my mixer to shred the chicken. I usually just cube it but that really looks easy. May have to try it. Also I usually serve it on a croissant

Why don’t any of these cooking shows clean the chicken? I first soak my chicken in salt water for about 30 minutes. Then take off any fat or slimy parts.

Here’s an excerpt from the USDA.gov website: “Some consumers may wash or rinse their raw meat or poultry because it’s a habit or because a family member they trust has always washed their meat. USDA research found that washing or rinsing meat or poultry increases the risk for cross-contamination in the kitchen, which can cause foodborne illness. If you wash meat or poultry, some bacteria can be splashed on the surfaces of your kitchen. Failure to clean and sanitize these contaminated areas can lead to foodborne illness. Cooking to the right temperature (whether frying, baking, broiling, boiling or grilling) kills germs on meat and poultry, so washing these products is risky and not necessary for safety.” That is what I follow now. My grandma always loved big pieces of celery in chicken and egg salad. It gave it texture and crunch. She would slice it 1/4” thick an not slice down the middle if the stalk was under 3/4”. But some of the wide ends she would split to half inch wide. It is a matter of taste really but that was how I grew up. That looks delicious, I will have to try.

I have just learned about the kitchenaid shred technique about 3 months ago! I LOVE it! Chicken burritos are much easier to make now. Also, do you ever do chicken breast from frozen in the instant pot? If so, do you do a lower pressure for more time? Side note, (I don't mean it as critical, but please think about a new paddle. Pieces of the coating may come off in food prep. Come through Kitchenaid 😊

great tip about using the kitchenaid. I remember on hot summer nights growing up my mom would make us a cold dinner. we loved it, egg salad, tuna salad, and maybe cold meat rolled up? I don't think she made the chicken salad but I do love it.

I am just now beginning to watch your channel. I don't have animals in my house and especially when preparing food. That turns me off. I know folks will be critical, but it takes all kinds to make the world go around.
