Brown Butter Cod with Roast Asparagus and Creamy Potatoes
INGREDIENTS FOR SINGLE SERVING ✨
1 8 ounce boneless fish fillet, cod or snapper
1-2 golden potatoes, peeled and diced
4-10 asparagus spears, bottom ends removed
1-2 garlic cloves, peeled and diced
1/2 lemon, cut into 4 small wedges
½ cup whole milk, heated
2 Tablespoons unsalted butter
2 teaspoons sour cream
1-2 Tablespoons all-purpose flour
Garlic powder
1 teaspoon extra virgin olive oil
Kosher salt
Fresh ground black pepper
Optional: Maldon salt
Optional: gorgonzola, parmigiano reggiano, aged sharp cheddar
DIRECTIONS ✨
Potatoes and Asparagus ⤵️
Preheat oven to 375 degrees.
Fill a medium sized saucepan ¾ full of water and place over high heat. (For more servings use a larger pot.)
In the meantime, peel and dice the potatoes and garlic and set aside. Rinse and dry the asparagus, cut off woody ends and line onto a sheet pan. Drizzle the asparagus with olive oil, sprinkle with salt, pepper, garlic powder and set aside.
Cut the lemon into wedges.
When the water is boiling add 2 teaspoons salt then gently drop in the potatoes bringing them to a full rolling boil. Once boiling put the asparagus into oven.
Set the timer for 15 minutes.
Pour a glass of milk and heat in the microwave for 1 minute.
After boiling for 15 minutes, pierce the potatoes with a fork to test for doneness. Strain tender potatoes, place back in the pan and mash with a potato masher or fork. Melt a tablespoon of butter into the potatoes and slowly add warm milk stirring to desired consistency. Check and adjust salt, add 1/8 teaspoon (large pinch) of pepper and sour cream.
Remove asparagus from the oven.
Plate mashed potatoes and top with cheese (if desired) and put into oven for one minute to warm. (If serving 4 or more, sprinkle the cheese over the potatoes, in the pan with a lid on, for up to 10 minutes.)
Cod ⤵️
Rinse the fish and pat dry with a paper towel. Generously salt and pepper both sides. On a plate or parchment paper dredge the fish in flour, making sure to dust all sides then shake off excess flour.
Begin to melt 1 Tablespoon of butter on low heat in a small heavy bottomed sauté pan. (For more servings use a wider pan.) Turn the heat to medium keeping an eye on the color. Once the butter begins to bubble, gently add the fish allowing it to be undisturbed for 3 minutes (for a good brown crust) then turn over. The thickness of the fillet will determine cooking time. An instant read thermometer will ensure doneness when the fish is 145 degrees in the center. Stay watchful that the butter remains golden brown by adjusting the heat accordingly.
Plate asparagus and crusty fish over the potatoes and serve with wedges of lemon and a sprinkling of Maldon (or kosher salt) for added flavor.
