Easy and Moist Cinnamon Apple Cake Recipe

Apple Cinnamon Cake Recipe

This apple cinnamon cake is the only apple cake recipe you’ll need. It’s perfectly moist, loaded with apples and cinnamon taste. Top with sweet icing glaze that sets and crinkles when you cut and take a bite!
Cake:
• 2 medium-sized apples (chopped) *Using smitten apples in the video
• 2 tsp lemon juice
• 2 tbsp light brown sugar
• 2 eggs (room temperature)
• 2/3 cup (130g) white sugar
• 1/3 cup (81g) sour cream
• ¼ cup (60 ml) milk
• ¼ cup (60 ml) canola oil
• 1 tsp vanilla extract
• 1 ½ cup (188g) all-purpose flour
• 1 ½ tsp baking powder
• ½ tsp salt
Cinnamon topping:
• ¼ cup (50g) white sugar
• 1 tsp ground cinnamon
• 1 tbsp unsalted butter (melted & slightly cooled)
Icing glaze:
• 1/4 cup (30g) powdered sugar
• 2 tsp milk
*Using an 8-inch round baking pan in the video
:: HELPFUL HINTS ::
* Measure your flour correctly. Adding too much flour will result to dry and crumbly texture of the cake when baked. Fluff the flour in the container before scooping it out. Lightly spoon the flour directly into the measuring cup until it mounds well above the top of the measuring cup. Using the back of the dinner knife (non-serrated side is facing the flour), sweep the knife over the top of the cup to remove the excess flour.
* Let the cake rest for 15-30 minutes before adding the icing glaze on top of the cake.

How were the cake pans prepared? Does using a mixer versus stirring the final batter change the consistency?

Hello! @angelagilliard7888. You can use any 8-inch round pan for this cake. I always line my cake pan with baking paper. If baking paper is unavailable, spreading room temp butter and sprinkling the pan with thin and even amount of flour works fine as well. As for using a mixer, yes you can always use one. Just make sure not to overmix it to prevent overdeveloping the gluten in your batter. Thus, will result into a dense cake. Hope this helps. 😊

Hello! @Ann-pk6vl. Yes, it does appear that the cinnamon mixture is in between layers of the cake when it's sliced however the mixture is only added as a topping. While the cake is baked some of the mixture sinks and creates this kind of look when the cake is sliced.
