Both are amazing, but nothing beats a fluffy, lighter-than-air, yeast donut. This recipe looks fantastic--can't wait to try it.

Hello! I made cider "donuts" for Thanksgiving. I was actually following another recipe very similar to yours but I found your video to be so helpful as far as how to do the cider reduction, melt butter and mixing the ingredients. Wow! The donuts were such a hit! I bought a doughnut pan now so I can make them look nicer. p.s. I found your voice very soothing. LOL

Definitely a great recipe. Made these twice with one small change, I used buttermilk instead of the yogurt because that is what I had on hand and they came out perfect. Next time I will need to double the recipe because 1 dozen is just not enough. The kids devoured them.

Hey thanks Ethan. I adjusted my set up to try and improve lighting. It a constant struggle with the layout/location of my kitchen. I do color grade each video, but I think this little adjustment is what your noticing. Either that or I bumped the saturation up too high 🤣! Hope you're very well man!

Hey Tim! This is the first no-fry doughnut video I've ever seen. Thanks for the metric quantities--I was starting to burn before you mentioned them being in the description. Does European butter work well for the browned butter? We did a blind tasting on fresh homemade bread of Kerrygold, Lurpak, and President and liked the Kerrygold best, but there was very little discernible taste difference, but Kerrygold is about 2/3 the price of the other two. I haven't made browned butter since going exclusively to Euro butter. I imagine it being fine, but with less water one would have to watch it like a hawk. Great recipe, and I like the little substitution suggestions like a half of a vanilla bean and a pinch of cardamom. And thanks for the notes and links in the description--very professional, Chef!

I noticed in the video that your browned butter was paste when you added it to the ingredients. Is it necessary to have it cooled to a paste? I'm making these today. I can't wait to taste them. They seem like they will have a good balance of flavor.

My goal was to make the brown butter loose enough so that it can be incorporated into the batter evenly, but cool enough so that the donuts aren't too dense in texture. Colder butter makes for a lighter donut.

Finished! And final verdict... drumroll... it’s really freaking good!! I can taste the apple, I can taste the spice, and the texture is that of a doughnut!! I’m definitely going to keep with this recipe now that it’s fall :) thank you!! Oh and final note though, for the future: if you’re only planning on making one batch, he mentioned this in the video, but there’s a good 1/2 cup of leftover sugar cinnamon coating left after making a dozen so if you don’t plan to make another batch soon and don’t want to waste ingredients, then I recommend that you make a bit less of this coating. Also, for me at least, the butter didn’t brown unless it was on medium heat (not low) and the apple cider had to reduce over medium-high but that’s just for my stove!! Really amazing recipe, my mom is a fan too, thanks and have a cozy fall everyone :)

Hey there, thanks for the question. Cider vinegar is not the same thing. You could try mulling some apple juice to sub out for the apple cider.
