I just retired, I'm making my own kitchen cabinets, I make backpacks, now I'm learning how to cook. I made a couple of your bread recipes. turned out great. My wife still works and with her out of the house durning the day, I have the kitchen to my self. I'm looking forward of making some of your pies, cakes, and such. I inherited my great-grandmother's recipe box, which included her peach cobbler recipe. She made a WONDERFUL sauce that tastes great on peaches, apples, and pears, but not berries. Then, we top it with pie crust or her biscuit dough. I miss her so much, but I'm grateful to have her recipes.

Absolutely delicious!! Eating right now as I write! I had to make it gluten free, I used rice flour. We then put it in a Dutch oven and cooked the cobbler over coals! This recipe is a keeper!!! The lemon on the apples really elevates the flavor! 10 out of 10! We're going to try the Blueberry and Lemon cake next, we've already purchased a special gluten free flour blend.

Thank you, John! My late mom's recipe used lard. The milk ratio was vague ("add just enough so...") This is so much simpler and it cooks up just as nicely. (My preference is a cobbler.) Highly recommend John's new cookbook everyone! Cheers!

Outstanding, delicious, even with otherwise non inspiring green apples! Love learning about combining the spices and cornstarch when tossing the fruit with lemon juice. A few years back I asked a man in the produce section of the grocery store what apples would make the best apple pie and he said he liked Braeburn. I tried them and he was absolutely correct! Those were the most delicious apple pies I have ever tasted. I'm not a great cook, but I do like to bake and to have my novice pie baking status elevated was so fun! My picky neighbor said it was better than his mom's, but not to tell her. LOL! Unfortunately I have had trouble finding them since leaving Oregon. I am in Indiana now and am going to try the local orchard. Wish me luck! Edit: Well, the orchard had the Braeburns, but they were all on the ground and good no more. 😭 Missed by about a week. My daughter in law said next season we will go to the orchard and she we will make apple pie filling, which she will can for me.

Actually baked goods’ rise (besides yeast breads) came from baking soda and an acid in the recipe Lemon lime vinegar buttermilk kefir yogurt sour cream Once cream of tartar from wine barrels was introduced, that was the acid instead- and then we got baking powder (with cornstarch added) Baking soda was produced commercially since the 1700s but it’s been in use since the Egyptians! Before baking soda in the 1700s, sourdough or Amish Starter (sweeter starter) was used for quick breads as well as the yeast breads. U can make cookies from it even, no tanginess, just yum!

Can you substitute maple syrup for the brown sugar?

If you have molasses, use 1 cup white sugar and 1 tbsp molasses. If not, you can do 7/8ths cup white sugar and 2 tbsp maple syrup.
