Could also pre-cold-soak the pasta in a bag prior to stopping for lunch to reduce boil time to 1-2 minutes to use much less fuel.

I’ve watched several of your videos now, and I enjoy watching and getting the great recipes and ideas for trail foods. One thing that I keep wondering, is what about cleanup? It is easy to put this stuff together, but what about the dishes? Would be great if you could make a video that includes everything from ingredient sourcing and prepping, packing, cooking and ultimately the cleaning to get a true idea of the effort involved. Thanks for the great content, regardless!

How does using mustard seasoning compare to using the packet? Benefits of one over the other? Loving your videos! Planning to try several of your recipes.

the packet has a little bit of acid which is helpful for the dish. If not using a packet, i would use some dry mustard

It my be horrifying but I’d add fresh onion and maybe some green pepper but that looked tasty. I’ve done the pot pie a couple times now with beef in it as well. I’ve been working out of town here in my state of Maine, motel life, brought the pocket rocket and the MSRjetboil just to escape fast food.

What about cold soaking the pasta while you hike so all you need to do is warm it up at camp? I'm curious how long this would take and how much water...or if it would even work
@ChefCorso2 жыл бұрын
Hey MK, you could but I don't normally advocate for it as the texture gets a little odd for me. With thin or small pasta, your cook time is pretty short.

@ChefCorso3 жыл бұрын
I call these weasel ingredients. Because they can be hard to find. I have found them at sandwich/coffee shops or grocery stores in the deli area. You can also use yellow in this recipe, just maybe a little less as it packs a stronger punch. enjoy!

Any tips on using fresh eggs for this recipe?
@ChefCorso3 жыл бұрын
sure thing! I would recommend cracking and mixing before you go. Then pack in, in an old soda bottle or something with a tight thread. Additionally, you could use Egg Beaters or Just Eggs.

I tried this recipe but adding the dehydrated eggs directly to the pot made the powder clump up quite badly. Great videos though, really changing the way I view backcountry meals! Thanks!
@ChefCorso3 жыл бұрын
Hey CM. Good call out. Any of the fine powders like grits/polenta, powdered milk and eggs need to be added slowly and stirring as you add to prevent clumping. Can also hydrate separately. Cheers!

Hello Corso, I am curious the reason you decided to modify so much of the Carbonara recipe? The biggest being the bacon, even with the small stove there, I would have thought that bringing fresh cured bacon and rendering out the fat in the pot before adding the noodles water, would be the first step. The second big change, was the egg powder. Though for packing it makes sense, I'd be curious to know if getting more of the yellows is possible within packing abilities. The whites discounting the richness that typically is the core of the dish.
@ChefCorso3 жыл бұрын
Hello DR! Good Q. For it to be truly backpacker friendly and last multiple days, the bacon needs to be pre-cooked/packaged and the eggs need to be powdered. If your trip is shorter or you're car camping, you can definitely use raw bacon and eggs for your pasta bowl. Either way your pasta will be filling and tasty. Cheers!
@TheAkashicTraveller3 жыл бұрын
You can get powdered egg yolk fyi.

Love your channel! Why eat garbage when you can have delicious food! Having said that.. we purchased way too much Kraft Mac and cheese. We've been experimenting with how to make it light and easy. We found boil pasta add to bag throw in packet and 2tbsp milk pow, 2 tbsp butter pow.. still not great though.. better with pepper and spice. Anyway to do a video on it? I'm considering freezing butter then vacuum packing. I'm not a wait hound but really just want to use it up and have a comfort meal
