I found one of the most challenging things about camp cooking is the one stove one pot restriction. That's what I like about your meals, designed to be cooked on a one burner camp stove.

I would eat that for sure. I pre make all my trail meals in mylar bags and rehydrate them at camp. One of my favorite meals is shrimp ramen made with dehydrated shrimp i get at our local Mexican tienda.

Loved this on trail this week, I used a JetBoil Flash to make it. Because the stove gets so hot, once the noodles were soft enough to get submerged in the water, I really didn't have to bring it to a boil again; I just let them soak for a bit and then added all the necessary ingredients. I did substitute the coconut oil packet for a packet of ghee I had in the pantry, and it turned out great. Thanks Chef! Will definitely be using this again.

Lofthouse makes freeze dried spices, I usually pack garlic and ginger. The garlic would have gone well here. Great for potatoes.

Series Idea- "How augment the package stuff." Sometimes I can plan my meals and bring stuff other times- its grab some of xyz and go. Would love to see your easy ways to dramatically improve those acme freeze dried bags or take the Ass out of Astronaut food :)

Hey MN! My initial suggestion is to add 1 fresh veggie and some acid. Can also pack along some low/no sodium spice mixes to bolster the flavor of whatever your packaged meal is. Also check out this video for easy added freshness: kzbin.info/www/bejne/onqcp2Oies9_Z9k

I just tested a pasta alfredo recipe in my kitchen using powdered heavy cream and a packet of chicken and it worked really well. Going to take it on the trail with some fresh broccoli to add. Dehydrated food is just gross. Thanks for the culinary inspiration!

Just tested my own recipe for a kung pao sauce for the trail. One packet of soy sauce. One packet of chili sauce, ginger, garlic, brown sugar and cornstarch to thicken if needed(might not use with instant rice)

Love your web and U videos. I have used Huel hot and savory various flavors as a base and added protein to it for various dishes. Light, dehydrated and healthy as I can see. My family is vegetarian so I have to be creative. Again, love your ideas.

You’ve inspired me! I caught you on Dan Becker’s channel. I’ve watched lots of these videos and I am also inspired by the names of some of these pre-made meals with awesome ingredients and some extra effort. For instance: chicken and dumplings. I think I could make this with actual dumplings on the top over a delicious chicken and veggies gravy. Why couldn’t you have the gravy mix mised into a bag and a dumpling mix in another? I feel like you could cook those dumplings with a lid and pot. 🤷🏻‍♂️ I’m going to start building my backpacking pantry and start trying some of these. You’re great! Content is awesome! I’m a trained chef and approve of all these recipes.

I love the idea of cooking my own backcountry food (I love cooking myself) but always find the clean up to be a pain. No running water or sink just makes it hard to fully clean my pots and utensils. Any suggestions around this? Or any plans release recipes for DIY dehydrated food?

I use rice flour in my Alfredo to thicken it up, now I kind of want to try using coconut milk and see what it's like.

For sure, rice flour can work as well. And this was coconut oil, not milk. But milk could turn into a nice Thai noodle dish!

I usually use milk and rice flour, I find the rice flour doesn't get gummy like normal flour and I don't usually have corn starch on hand. I know you used coconut oil, but I'm just curious what it would be like with the coconut milk. Could be good might be terrible, but I sometimes don't have regular milk on hand but I have plenty of cans of coconut milk I use for making curries. Love watching your videos by the way. 💚

I love your videos you know very good but as an Italian to see pasta cooked like this is a blow to the heart the Water should be boiled and then put the pasta not all together and the salt should be put when the Water boils

I hear ya TZ. I trained in Northern Italy and when cooking at home, that is the absolute way to go. But trail cooking is slightly different, needing to tweak some steps with the equipment available. I found no flavor or quality issues with this method and the concentrated starch in the water was helpful for thickening the sauce.

I know that you're not a huge Jetboil fan. I am considering getting a Stash because of it's packability. How did using the Stash work for ya, Chef?

The Stash has a different burner than the standard jet boils, with more surface area and more even cooking. Overall positive. Stay tuned for a full review next year!

I hate freeze dried meals. I mostly cook with instant rice or pasta along with foil packets of meat and I make sauces from scratch.

Why dont simply add your ingredients to dyhidrated meal? So you don't need to pack entire kitchen for one meal. I always add some ingredients for my taste so i can enjoy even tasteless meal. It saves time on cooking and space in backpack 🙌

Hey Gy. My preference is not to eat out of a bag or dehydrate meals all day prior to a trip. We have many recipes that use 3-5 ingredients so you don't have to pack the whole kitchen. But you do you for your meal plan!
