Banana pudding is one of my favorite easy desserts! It’s made with layers of sweet vanilla flavored custard, cookies and sliced fresh bananas placed in a dish and served.
INGREDIENTS
2 ½ cups (650ml) whole milk
½ cup (125g) granulated sugar, divided
4 large egg yolks
⅓ cup (50g) corn starch
Pinch of salt
2 tablespoons (30g) unsalted butter
2 teaspoons pure vanilla extract
⅔ cup (150g) heavy cream
2 tablespoons powdered sugar
9 oz (250g) any vanilla cookies
2 to 3 ripe bananas, sliced
Caramelized walnuts, cookie crumbs for decoration
PREPARATION
1. In a saucepan, combine milk, ¼ cup of sugar and vanilla. Bring to a boil, stirring often.
2. In another bowl, whisk together egg yolks, ¼ cup of sugar, salt and corn starch. Stir the milk in the mixture and mix until well combined.
3. Pour the mixture into the saucepan and cook uncovered, stirring often, until the mixture thickens, about 3-4 minutes. Remove from the heat, add the cold butter and mix well, using a spatula.
4. Cover with a plastic wrap and refrigerate for at least 30 minutes.
5. In a mixing bowl, beat heavy cream and powdered sugar until stiff peaks from 2 to 3 minutes.
6. Fold the mixture into the chilled custard mixture.
7. Spread a thin layer of the pudding in a 9-inch (22 cm) cake pan. Arrange a layer of vanilla cookies on top of the pudding. Top with an even layer of banana slices. Spread one-third of the remaining pudding over the bananas and continue layering wafers, bananas and pudding, ending with pudding.
8. Sprinkle with crumbled cookies and caramelized walnuts, optional. For caramelized walnuts, melt 1 tablespoon of butter in a pan, add 1 tablespoon of sugar and ¼ cup of walnuts. Stir fry until walnuts are fully caramelized.
9. Refrigerate for at least 3 hours, or up to overnight. ________________________________________________________________________
