Our UK Ninja does not have 'proof', that is replaced by 'steam'. So I use the 'dehydrate' setting, which is a very tiny warmth and does the same job I think

and we dont have steam and crisp but 'steam and airfry' which I do not think is the same thing.

Great idea to use the dehydrate setting! Adding the warmth just accelerates the proofing process but you could set it in a warm place in the kitchen and achieve the same result but would take longer. Bread density was not exactly as I wanted on this first loaf but I will tweak with each loaf I cook till it is perfected! Thanks so much for watching!

@@realfoodprep Actually I now find dehydrate is too warm and makes the dough 'skin' Better just to put the Ninja on bake for a minute then turn it off and put the dough in, the residual heat proves the dough

Although the temperature is about right, as I understand it, the dehydrate function uses the fan to dry out the food inside. Naturally, that is going to affect the bread dough. Proofing should be accomplished in a moist atmosphere, so I can understand why this is giving you trouble.@@NickHarman

Thanks so much! I just bought a Combi and there are really no instructions for baking bread. This is the guidance I needed. I am not using the Combi proofing function this go around but I will try the steam and crisp function to bake it. We will see how it goes.

@@realfoodprep We can go through it together. What i find strange is that I thought I saw Proof on the Combi Cook menu yesterday when I brought it home but can't find it today. I also can't seem to find a Customer Service number. This is my very first Ninja product. The bread I cooked today using your directions I think came out ok but may be a little under cooked in the middle, although the thermometer seemed correct. Anyway, there is a definite learning curve. Chicken was ok last night but just ok. I'm going to try a chicken curry recipe tonight. Can you use silicone bakeware in Ninja?

I have not personally used the silicone bakeware but have seen others us it. MY COMBI arrived damaged so I had to ship back to Amazon for a switch out....I was so disappointed

@@realfoodprep oh no. So frustrating. I seem to have lost the Proof function. It no longer shows Proof on the menu so I'm curious. Haven't called Customer Service yet. I have to say I'm not impressed with Bake. Bread, brownies, and apple tart came out lack luster. Maybe it's me. When I look at other bread making/baking recipes, people seem to be using the Air Fry menu. I may try that in the next couple of days. I wish the instructions were better.

@@realfoodprep After trying to use the Combi, I had to return it. There were electrical issues and I was shocked. I replaced it with another brand. I've ordered silicone bakeware. Hoping this will be the answer for baking breads. Meanwhile, I have successfully dehydrated several items.

You do not for proofing I just go ahead and do it sometimes so it's already in there when I go to cook it

No, I thought it might cook it a little quicker on crisp but I think steam and bake would work fine as well. Thanks for watching!
