Try it! I'm new to making bread and I just used my brand new foodi for the first time tonight, following her video here, and my hubby and I loved it, but didn't ride quite as much, and it was a little bit chewy, but it wasn't heavy. I chalk it up to I think I used too much oil in the pan,, still, I will use my foodi for bread as much as possible from now on. Like any new skill, there is a learning curve that requires practice. But this foodi and watching Louise while I worked on it, made it so much fun. It took all the fear right out of me.

My ninja doesn’t have to dehydrate feature, but I used the warming feature. I turned it to warm for 2 minutes and turned it off. Then i used a pot lid to cover the bowl. Did the same for the second rise. Very comparable time and delicious bread in 90 minutes. Thanks for these great videos.

@@TheSaltedPepper I will, now here's a question. Like you I LOVE bread right out of the oven with salted butter! Will you do other types of breads? I like rye bread. Also after the second rising take the dough and make in into a pretzel shape...place it in a pot of boiling water that has 1/2 cup of baking soda. cook 1 min on each side THEN bake it....nice chewy hot pretzels right out of the foodi. Its the baking soda that give the white bread the pretzel taste. I sprinkle poppy seeds on the dough before backing. That would be a great video. Keep up the good work

Saturday, my husband bought me the OP305 model of the Foodi and I can't wait to start to use it! Now I am beginning to look for recipes and how-to KZbin videos for this amazing machine! I had four women (three in the store and my hairdresser) tell me that they absolutely love this machine or another brand of an Air Fryer. I have been wanting to make homemade bread and now I have no excuse! We ordered a loaf pan from the company so I make a loaf but I will try the round loaf until I receive my new accessories. So much faster to proof and bake bread! Thank you again and I want to say that your detailed explanation and thorough video is amazing!

I just made a loaf in the FD 402 8qt. My loaf was browner & raised 3 inches in the center. Might bake 320 next time for 10 mins then back up to 325 for last 20 mins. My flour sack towel actually stuck to the loaf and I need to dampen it more. Easy recipe and will do again. This method is perfect for a cold winter day up north. tx SP!

Hi Louise. Just made your bread. Wow. Fun to make, delicious to eat. Some notes for everyone if making it the Ninja Foodi Smart-Lid model OL-701. Change the bake time to 20 minutes, down from thirty. This machine has greater wattage hence quicker baking (it would seem). Also I did not cover the bread during either of the proofing steps. No problem. A terrific recipe. Keep in mind it does differ from the Ninja Kitchen recipe for this model. Nevertheless, it came out absolutely perfect. Thanks for an excellent video, as usual.

I'm glad you tried it using the new model. If you used the proof setting that is why you didn't need to cover it, there isn't a fan running to dry it out. It's a very nice feature. Did you use steam/bake or just plain bake?

I used just bake but next time I'll try the bake and steam. The Ninja Kitchen recipe uses, I believe, Steam&Crisp. I used your recipe but my stand mixer for the opening attack :) Seems one could use bake, steam&bake or steam&Crisp thus producing slightly different textures to the bake. Really rather amazing if you think about it. Thanks again for your efforts and time. Best Regards

I love making bread and have wanted to try it. My foodi doesn't have the dehydration function. Can I use the "keep Warm" button?

Keep warm is too hot and will kill the yeast. Instead use the lowest bake/roast setting (250 I think) and heat it up for 5 minutes, then turn it off. Do that while you are making your bread. By the time you are ready to proof, the temp will drop enough. If you think it’s too hot still, just leave the lid open for a few minutes. Put your bread dough in a cake pan on the rack in low position and then close the lid. It will be just warm enough to proof your bread pretty quickly. 😊

I was and still am excited about the prospect of this bread …. but my first try had insufficient yeast. I wasn't sure about what I was seeing when I proofed it, just a few dozen tiny bubbles on top...I think I should of trusted my gut and threw out that yeast! My kitchen nightmare story: I was using the breadman to make basic bread and it became unplugged. Think it was in the 1st knead, had to keep adding flour, sticky. Who knows. Kept kneading and adding flour. This breadman is over 20 yrs old. Bread is my nemesis, anyways I wasn't going to throw it out and start over. I followed you're rise direction for 30 min and saved it. As for the taste don't know. Ninja and you for the WIN.

Just looked into the ninja food processor for its features and one was a Dough function to help us folks who found it intimidating to do. Have you made a bread video using the 601/701's Proofing Feature. If not Could you do one when you have the time.? Great job as usually. Made your sausage and pepper recipe was great. .

It does, but in all fairness the new one with Steam & Crisp does do an incredible job!

Your suggestion to use Steam and Bake instead of Steam and Crisp makes all the difference. I also nested a 7-1/4" cake pan inside the black basket, lined with parchment misted with oil, then put 1/2 of the dough to proof, the rest in the refrigerator overnight. Nesting with a cake pan provides structure for the bread to rise up, but not out. I added 2 C of water to keep the steam from running out before baking is over. Finally, dough left in the refrigerator overnight, proofed twice then baked, has a much better flavor and texture.

i have a smaller foodi without the dehydrator option. is there a way for me to proof it with the model i have?

I was wondering about using bread flour instead of AP flour or making a honey wheat or multi grain bread. Also curious what change if you used the self rise flour. ^_^ Maybe too much rise when proofing.

I don't usually use self rising flour, but bread flour would be great. I wanted to keep this recipe very simple for people who have never made bread before, so I kept the ingredients to what most people have on hand.

Why do we need to score the dough?

Scoring the dough helps control the direction of the rise. So, scoring it on the top allows the bread to rise up instead of out during baking.

Oh my! Great job! I love your tutorials! BREAD 🍞😍 The smell is what I love the most! Lol I like pushing my Ninja Foodi to the max-experimenting with different things, this will be on the list! I bake sourdough bread the old fashioned way-in my PC stoneware bowl-in the oven, but I’ll have to try it in my NF now! I have bread makers that I love to use as well! I’ve been trying low carb or keto friendly bread lately, but nothing beats hand kneaded, freshly baked bread!!! OMG!!! 🥰

I made this bread the other day and I already need to make more today, it was THAT good! my hubby raved about it! One question: why didn't you use the Proof setting? I'm still going to use the dehydrate setting today while following this recipe again. I'm just curious for the next time I make it.

Is it possible to make the dough in the evening and bake in the morning? Will it be okay to do that also?

You can make the dough ahead of time and let it proof once. Put it in a sealed baggy in the fridge and then let it proof again the next day before baking.

The Salted Pepper ...It turned out great! I love sourdough but it is finicky and each loaf seems to turn out a little different in texture and flavor even when I weigh the ingredients. I love a yeast bread too and it does have a more reliable outcome. Your videos are great, I hadn’t even thought about making bread in my foodie until I saw your video! Thank you 😊

While I don’t follow Keto per say, my husband and love low carb eating and I have several recipes on my website for these, just not converted to the Foodi yet. If you share an example of what you want to make, I can certainly try to get a video done for you. I know there are many other people who would like it too!
