I was a baker. I was taught by a bread baker. He showed me how to tell when you have perfect dough. Take a piece of dough between your fingers and spread it thin so you can see threw it. If it breaks apart it is not ready. It should stretch easy. Also to tell if your bread is done, tap it. It should sound hollow. If you brush your baked loaf right from the oven/airfryer, with olive oil, it will stay fresh longer.

My countertop microwave is also a convection oven ( which is what an air fryer is). Nice for baking. An 8" cake pan fits, as does a loaf oan or angel food cake pan. Do you mix the dough in the normal fashion then pull off what you need and refrigerate the remainder? How many loaves does it make? Thank you for this tip.
@jvallas
@jvallas Жыл бұрын
A little tip I've seen but not actually used - pull a bit of dough from the loaf before the rise, put that small bit in a small glass (see-through) container. When the small bit has doubled, so has your loaf. Then it doesn't matter what shape the loaf is in your Cambro or whatever. I keep forgetting to try that. But I'm thinking that bit would also be perfect for then putting in the fridge for anyone who uses the "old dough" method of breadmaking. (Or just put it back in your main dough.)

Bake 1 or 2 regular loaves, cool completely, slice, then freeze in zip-locks. I do all my bread products this way, homemade or store bought. Freezing keeps it fresh. I toast it frozen. It thaws at room temp or in the microwave for a few seconds. Small loaves are just fun, but I don’t worry about quantity for a single person. If I’m going to the trouble of baking bread, I want a bigger yield for my time and effort. Bread freezes well for about 2-3 months.

I've never done bread in the air fryer, but I've done biscuits, and I started tenting them with aluminum foil for the first half, then uncovering them for the last half, and brushing them with butter or olive oil when they first come out. It really helps to avoid that overly browned top. I bake a LOT of things in my air fryer: pizza, brownies, cookies, biscuits, mac and cheese... just have to lower the temp and tent things. My next challenge is a cheese cake in the air fryer using ramekins of water and tenting with foil to prevent cracking. Fingers crossed!
@mamabear52

To prevent my biscuits from over-browning I use a lower temperature to start, raising it only after they are light brown, but never over 345. The biscuits rise okay, a higher temperature throughout would probably give a better rise but I have burned too many for that to be important, lol.

Very impressive results! I have baked bread from a packet of bread mix, but it was a lot of work kneading, proving and allowing to rise. And then heating up my main oven and so on. I have had a Ninja round Foodi air fryer for nearly two years and use it all the time now, sometimes twice a day. My main oven is practically redundant, as I'm only cooking for one anyway. But I will also need to buy a slightly smaller loaf tin as the one I used before in the main oven is just too long to fit inside the Ninja pot. You explained all the steps carefully and slowly and I'll be checking out your other videos soon. I'm in the UK, by the way.

Pam, I always use my bread machine to make the dough for my oven baked breads (Fibromyalgia makes it hard to knead for me) so I tried this recipe that way. I used the dough cycle which is 1:50 minutes. I only had to add a couple pinches of flour while in the kneading cycle and the dough turned out beautiful. I degassed and rolled it as usual (just like you do!) and got it in the little Fat Dadio pan that I bought to make this bread and allowed it to rise until double, about 30 to 35 minutes. I baked it in my regular oven at 350 and it took about 28 minutes to reach 200 degrees. BUT….this thing rose so high in the oven that it looks like one loaf on top of another and started lilting to the side! LOL! It is cooling now so I have not tried it yet but I have to say that I could have easily used my favorite pan, the Wilton non-stick 9X5. If I like this bread I will use the 9X5 next time. I think maybe the DOUGH cycle on my Zojirushi really gave it a work out developing those gluten strands even more so than the mixer would have. Perhaps that is why it rose so high? I wish we could ad pictures here, but trust me, you would laugh! 😉

Wanted to add that after we tried it we really liked it! Soft crumb, tasty and very good! I will be making it this way many more times! I encourage other who have a bread machine to try it that way and bake in the oven. Beware, you may need a bigger bred pan to bake it in though.

They were all great value. I enjoyed comparing the bags but don't mind how you film it, I'll watch anyway 👍 Hope the kids sorted themselves out, I remember it well when mine got on each others nerves 😂

Hi from Southern California. I've never used my Ninja for baking but might give it a try. If the dough seems too soft you can just take enough off before making the loaf and used that extra dough for one or two dinner rolls or even cinnamon swirl rolls. Yum.

I gave it a shot yesterday. I must have the world's smallest air fryer, because I had to break the dough in 2 (half is in fridge now); another commenter mentioned using a Pullman covered pan, but even my mini Pullman cube is too tall. I did add tangzhong, but that just enhanced it & didn't cause problems that I can tell. The one problem - I covered the top with parchment, and it still started browning on top too fast. So I switched to foil, and I think that kept it safe. The bottom remained really pale, but a thermometer showed it as done, & it's a yummy small loaf of bread regardless. I baked in a 6" round cake pan. I have a countertop convection oven, so I'm thinking I'll use that from now on. My small air fryer is too limiting. It's still a great method all things considered.

My goodness this was fun. That mixer is on my life list if I ever get a big enough kitchen. I baked bread in a toaster oven so I already have the small pans. I wonder about all the silicone bakeware & air fryer liners? I will be experimenting here. Thank you

Great Video - Definitely will try in my Gourmia 8 Qt Air Fryer. I bet it will be better than using my "Hamilton Beach Bread Maker, but I might try my "Hamilton Beach Bread Maker - Make Dough Option" or my "Hamilton Beach Hand/Stand Mixer Dough Hooks" to make dough and then bake in my Air Fryer. I might put some Aluminum Foil over the bread at the end or beginning to reduce browning a bit.

I tried my bread pan in my air frier. It just fit. I don't have a drawer type airfrier. My frier has more head room so I won't have to worry about it rising to high. 👍

My large oven is out of commission right now due to a gas leak, so your small loaf recipe comes at an apt time for me. My bread will bake in the toaster oven today with the rack flipped to lowest position. Fortunately, I have a small loaf pan just like yours. Thank you for your wonderful videos. They are always helpful and interesting.

This is exciting! Thank you for your hard work and creativity! We're only 2 as well and we always have more bread than we "need". lol (I could eat a whole loaf with butter, but that wouldn't be too healthy! lol). This is the air fryer we have so that works great!!! Could we just add a small bit of foil on top of the loaf to keep it from browning too much? Thank you!

When I had the problem of my loaf rising to high, I took a bit of the dough and made additional tiny loaves in a cupcake pan. It solved my problem, and I loved having the tiny round loaves for individual servings.
