if there's beans in it, IT'S NOT TEXAS CHILI!!!

There Are No Beans in Real Chili: Just Ask a Texan. ... There's a saying in Texas: “If you know beans about chili, you know chili ain't got no beans.” In Texas, “chili” is shorthand for chile con carne, which translates to “chile peppers with meat.” No beans in sight.

yep, with beans it's called beef and bean stew..

Howdy. I'm a Native Texan who grew up in the shadow of the Fort Worth Stockyards (my mother worked there). So, I'm going to say your recipe is pretty authentic. Some say the acid -test for chili is you make it with nothing you could not carry in your saddle bags in the mid-19 Century. I'm not so sure that's the case since the true foundation of chili is with the Chili Queens of San Antonio. I'm sure they had access to more than one could carry in their saddle bags. That said, you are right about the beans. It's called chili con carne, not chili con frijoles for a reason. Your basic ingredients are good although I would suggest you sometime try "chili meat" instead of ground beef. Chili meat is a very course ground beef that is a little chunky and still has some of the connective tissue tying the chunks together. If you don't get at least one piece of that caught between your teeth, it's not real chili meat. Some butchers and meat markets call it "chili grind". Does it change the flavor or taste? Probably not but, it's what I grew up on. When my Mom served chili, it was simply red in a bowl. No cheese, no cilantro, no anything else. We ate it (as I do 70 years later) with nothing but saltine crackers on the side. Now, I will admit that chili and Fritos seem to be a marriage made in heaven so I wouldn't criticize your daughter for liking it that way. You guys have a great channel and I enjoy your videos. Keep up the good work and remember that every bowl of good chili needs a cold bottle of Shiner Bock to go with it!

Just found your podcast. I work overnight and listen to hours and hours everyday. Can’t wait to show my wife and girls your KZbin channel. We recently bought an LX470 and the wife isn’t onboard with off-roading yet. But it came with a snorkel and no running boards. 😬 Since you were both homeschooled, I assume Christians? I don’t know anyone around us here in SW MO that homeschools that isn’t a Christian.

Our 3 and 6 yr old girls like chilli too especially when camping. I add a beef bullion cube for more flavor. My favorite pairing is a good thick tortilla chip or over rice. Save leftovers for breakfast burritos. An easy way to add more veggies and beans is a can of annie's vegetarian chilli.

I have noticed that you were running a Partner Steel stove and now you are running a Camp Chef Mountaineer. I have been looking at these two stoves for my personal overland and backcountry use. What is your opinion on one over the other? Keep up the exploring!

Adding water to diced onion in the bag should do the trick for the smell thing, but your ziplocks need to be water tight. Wait till you try the chili using bison! Where’s the Lexus? Thinking about 4Runner or the GX but I’m hoping for more reviews. Have y’all seen the new rav4 on the trails yet?
