Awe I love that you adopted! I’m adopted and we are foster parents. I know you’re both involved in church. I think it’s such a blessing to have grown up in a Christian home and provide that for our children. ❤❤❤

Our favorite smoked saisage recipe is from "365 days of crockpot" called, Instant Pot Smoked Sausage Country Boil. you layer potatoes, green beans, corn on the cob, and sausage, seasoning each layer with Old Bay, top the corn with butter pats and pressure for 1, yes one minute. It's great on a hot summer day when you don't want to use your stove, and have garden fresh produce. Thanks Mindy.

I like to add smoked sausage to what I call beans n’ greens. Pretty much beans and hearty greens like collards, kale, or whatever hearty green you like cooked together. That alone is satisfying but adding the sausage brings it up a level.

I was really hoping to see my recipe featured here. I really think you would enjoy it. Kielbsa casserole. Put pot of water on to boil. When boiling add a box of bow ties. Pan sear 1 link of sliced beef kielbsa. When browned well add 2 tlbs of butter or pan with a frozen bag of Broccoli, cauliflower & carrots. Sprinkle 1 packet of Sazon. 1tsp of garlic & onion powder to kielbasa veggie mix. When spices are well mixed into veggie mix and veggies are defrosted. Add bowties to veggie mix with .5 cup of shakey can parm cheese. Mix and serve.

A really "cheap" dinner I serve often in the fall & winter is: A smoked sausage, some cabbage, some sweet potato chunks, & some apples all cooked together. I also sub the sausage for ham in many soup recipes. And, I use some diced sausage in my scrambled eggs. Right now, I'm eating some leftover cabbage soup (an old Midwest Living recipe) that uses smoked sausage as an ingredient.

Honestly, when my kids were very little, we didn’t worry about making them eat the same dinners I cooked for me and my husband. They often ate a meal of things they liked, fruit, cereal, cheese & crackers, toast, Mac, yogurt, scrambled eggs, whatever…usually earlier in the evening and then my husband and I would enjoy our dinner a little later. We would find a few things we all liked occasionally, but I didn’t fret over it in those toddler years. Hang in there!

I made the Budget Savvy Diva recipe recently and it was a hit with my family. I also added smoked sausage instead of ham to a quiche recipe I made with the Bisquick so it makes its own crust. I may actually like the smoked sausage over the ham in that recipe. I do have to be careful though. You said you have trouble staying asleep since you turned 40. Well, my husband and I are slightly older than you, we recently celebrated the last birthday in our 40s. A couple of months ago I made hot dogs one night and smoked sausage about 2-3 nights later and we think that’s what caused my husband to get a nasty case of gout 😢. So now I try not to serve processed meat with casing more than once a week. He seems to be able to handle it sometimes.

Our family enjoys what we call Tailgate Sausage and Potatoes. It’s a block of butter melted in a 9x13 foil pan, a pound of sliced sausage, red, orange and yellow bell pepper cubed into chunks, a medium onion also cut into chunky pieces, red and sweet potatoes, cut into cubed pieces and about a cup or so of beef or chicken broth. Bake covered with foil for an hour, then uncovered until the veggies brown up a bit and are tender. Great for large crowds as the title infers… great for a sports event or party.
