INGREDIENTS
1 - 4 TO 6 POTATOES OF YOUR CHOICE ( MORE OR LESS )
2. 1 - 2 TEASPOONS OF OLIVE " EARL , CANOLA OIL, VEGETABLE OIL - YOUR PREFERENCE
3. 1 - 2 TEASPOONS OF ONION POWDER - MORE OR LESS (TT)
4. 1 - 2 TEASPOONS OF SEASONING SALT
5. 1 -2 TEASPOONS OF SLAP YA MAMMA CAJUN SEASONING OR YOUR FAVORITE
6. 1 - 2 TEASPOONS OF ROASTED GARLIC POWDER OR PLAIN GARLIC POWDER (TT)
7. 1 - 2 TEASPOONS OF SMOKED OR REGULAR PAPRIKA
8. 1/2 PACKET OF SAZON GOYA CON CULANTRO Y ACHIOTE ( 1/2 TEASPOON )
9.1-2 TEASPOONS OF BLACK PEPPER OR (TT)
10. 1 - 2 TEASPOONS OF FRESH OR DRIED PARSLEY OR AS NEEDED
11. 1 - 2 TEASPOONS OF BUTTER OR MARGARINE
12. 1 MEDIUM SWEET ONION - SLICED
13. 1/2 TO 1 CUP OF MOZZARELLA CHEESE
14. 1/2 CUP TO 1 CUP OF ITALIAN THREE CHEESE BLEND
COOKING INSTRUCTIONS
THE POTATOES PREP
1. RINSE OFF THE POTATOES WITH COLD WATER - PAT DRY
2. CAREFULLY PEEL THE POTATOES ( IF YOU PREFER YOU CAN LEAVE THE SKIN ON )
3. SLICE THE POTATOES INTO 1 INCH ROUNDS
4. PUT THE POTATOES INTO A BOWL WITH COLD WATER UNTIL NEEDED
SEASONING THE POTATOES
1. DRAIN OFF THE WATER FROM THE POTATOES & PUT BACK INTO A CLEAN BOWL
2. ADD 1 -2 TEASPOONS OF THE OIL TO THE POTATOES
3. 1 - 2 TEASPOONS OF THE ONION POWDER OR (TT)
4. 1 - 2 TEASPOONS OF THE SEASONING SALT
5. 1/2 - 1 TEASPOONS OF SLAP YA MAMA OR YOUR FAVORITE CAJUN SEASONING
6. 1 - 2 TEASPOONS OF ROASTED GARLIC OR PLAIN GARLIC POWDER
7. 1 - 2 TEASPOONS OF SMOKED PAPRIKA
8. 1/2 PACKET OF THE SAZON GOYA ( 1/2 TEASPOON )
9. 1 - 2 TEASPOONS OF BLACK PEPPER
10. 1 -2 TEASPOONS OF DRIED OR FRESH PARSLEY
** PLEASE FEEL FREE TO OMIT OR ADD YOUR FAVORITE SEASONING **
** IF YOU PREFER YOUR POTATOES TO STAY WHITE OMIT THE SAZON & SMOKED PAPRIKA **
13. RUB ALL THE SEASONINGS INTO THE POTATOES UNTIL THEY ARE COMPLETELY COVERED
14. MARINATE THE POTATOES FROM 30 MINUTES & UP TO 1 HOUR
COOKING THE POTATOES
1. USING A SKILLET ON MEDIUM HIGH HEAT
2. ADD 1 - 2 TEASPOONS OF THE BUTTER TO THE SKILLET. ALLOW THE BUTTER TO COAT THE PAN
3. ADD THE SLICED ONIONS TO THE SKILLET
4. SAUTE' THE ONIONS FOR 2 TO 3 MINUTES
5. ADD THE POTATOES TO THE SKILLET. COOK FOR 4 TO 6 MINUTES ( SAVE THE LIQUID IN THE BOWL)
6. FOLD THE ONIONS INTO THE POTATOES, COOK FOR AN ADDITIONAL 6 MINUTES OR AS NEEDED
7. ADJUST ANY SEASONINGS TO YOUR LIKING IF NEEDED
8. POUR THE MARINADE IN THE BOWL OVER THE POTATOES
9. COVER THE POTATOES & COOK FOR 12 TO 15 MINUTES . ( MORE OR LESS AS NEEDED)
10. CHECK THE POTATOES FOR TENDERNESS
11. WHEN THE POTATOES ARE TENDER ( NOT MUSHY) . ADD THE CHEESES TO THE TOP OF THE POTATOES
** PLEASE FEEL FREE TO USE YOUR FAVORITE CHEESES **
12. COVER THE POTATOES.
13. TURN THE HEAT DOWN TO LOW
14. KEEP COVERED UNTIL THE CHEESES ARE MELTED ( 3 TO 4 MINUTES MORE OR LESS )
15. SPRINKLE WITH FRESH OR DRIED PARSLEY
