3 lbs. Boneless Chicken Thighs
1/4 cup Butter
1 large Onion, peeled and chopped
1 1/2 cups chopped Celery
1 1/2 cups chopped Carrots
1 tbsp fresh Thyme Leaves (1 tsp dried)
1 Bay Leaf
8 cups Chicken Stock/Broth
3 tbsp chopped Parsley
2 cups All-Purpose Flour
1/2 cup Vegetable Shortening
1 tsp Salt
1/2 tsp Baking Powder
3/4 cup Buttermilk
For Cornstarch Slurry
3-4 tbsp of Cornstarch
Equal parts Water

Okay, I'm making this tomorrow. This is one of those good recipes that's easy and has ingredients that you are likely to have on hand. One of the things I learned from AB, always have chicken stock on hand as a staple in the pantry. It's rainy and stormy for us right now and this recipe is going to be absolutely perfect for keeping my household warm and snuggly.

Made your chicken and dumpling last weekend with a couple of changes. I did leave out the celery and I pre-seasoned bone-in chicken thighs for 24 hours then smoked them on my kamado grill. I pulled the meat and followed the instructions pretty close from there. It was outstanding if I do say so myself so thank you for posting another outstanding recipe to use a a guide. For the record I even tried the salisbury steak...

Hey AB - wanted to give you an updated comment. 4 days ago, my beautiful Greek wife came down with the flu, which led to the beginnings of pneumonia. She only had one request - honest to God. “Honey, can you make me AB’s chicken and dumplings?” So, I found it in my favorites folder and took care of business. As always, I changed NOTHING. Ok so due to my mom never being taught how to cook I was never taught growing up. I learned how to cook when I was 24. I am now 32. I learned from my ex boyfriends mother who was from Mississippi. Mind u I'm from a suburb right outside of Chicago. I can cook almost anything now thanks to her. But this is one of the things that she never taught me. I stopped eating dumplings as I got older. I couldn’t stomach the quick way. Where the dumplings were either flour tortillas or biscuits store bought. Grandma went on to glory and I never learned the home made version. But this recipe right here that doesn’t require salt or pepper in the actual soup. Oh my 😋my kids request it regularly Ty ❤️

My grandmother was from Yazoo City Mississippi. I have so many memories of her southern cooking even though those memories were made in Fresno California. Sunday dinners were fried chicken, mashed potatoes and okra. But every so often she made chicken and dumplings. This looks so good, I can't wait to try it. Thank you AB.

Thickening, I mix some of the stock in the pot with seasoned flour instead of corn starch. It reduces the liquid into a darn near mama slapping broth

One of the best chicken & dumpling recipes I’ve discovered on the internet. I have my own way of making this favored dish that I’ve done for years but since watching this video, I’ve incorporated some of your touches such as shredding the chicken with a blender! Genius! It also allows you to use more chicken in the recipe, whereas before I was only putting in as much as I was willing to shred. Right on 🙌🙌

Oh man, delicious. I had to make it again so we could get some, my two sons ate it all, they said they couldn't stop eating it. I did a taste test and went to work. I came home the pot was cleaned and I searched the refrigerator a couple of times. I was lost, because I couldn't find it. That's when they told me they couldn't stop eating it. REALLY!!!
