This was a big hit. I fixed it for my husband for his bday breakfast Sunday with scrambled eggs and he loved it. Once the eggs were done I only put enough for his meal so the next day he could fix another two fried eggs and have the rest again. He did just that. It was hard for me to not dive in but on a diet. :)

I made this for me and my husband for dinner along with a warmed croissant, but I used my instant pot and the cheese melted into the food perfectly. It was delicious. By the way, I broke the yokes on purpose for my egg and left the others whole for my husband. He loved it! You are absolutely correct - those potatoes must be cooked just right. This recipe is amazing! It's so versatile too. You could add sausage instead of bacon or in addition to bacon. Half an diced onion if you like that kick! Eggs any style you like. Hot sauce could go in there, I like Cholula. Well done, sir.

Use the recipe in the description if feeding two. His printed recipe ratchets up the ingredients a lot (e.g. 4x russet potatoes) but feeds four easily. Use a big skillet and can cover it to steam the potatoes as they cook. Made this today for our guests to rave reviews. This one’s a keeper!! Thanks AB!!

My goodness, that is one phenomenal looking breakfast. This is an appetizing meal that would be perfect at any time of the day or night. The only slight adjustment I’d make is to add some sliced fresh jalapeño or Serrano peppers for the spice that many folks like in their meals. My friend, you’ve definitely hit it outta the park! AB, you are straight to the point and keep it real. We also used our cast iron pan and cooked thick cut bacon w/two Yukon gold potatoes, a red bell pepper, three eggs, and shredded extra sharp cheddar cheese. The potatoes rendered in that bacon grease gives it perfect flavor. I gotta say, this dish was bomb! And we had enough for two servings of leftovers.

I make this about twice a month. The only thing I do different is add chopped onion and mushrooms. It’s super easy and you can make alot just by adding more potatoes. I use a 15” cast iron so it fits. Great job. Love all your videos.

That is one of my go to meals when I'm running low on groceries and don't really have a plan. Difference is I cook up the "hash" push it to the side, fry my eggs and put them on top of the hash on my plate with the egg yolk still runny to spread through the hash...yum!

OMG, that looks so good! It's a meal that allows you flexibility, bc you can substitute pork sausage for bacon, or hit it w/ red bell, stretch it w/ dirty rice, etc. I think some Videlia onions would be delicious in it. Those dixie plates! Only KZbinrs have those fancy ass plates, but AB keeps it real. We would be using those too. Less dishes.
